In earlier post I have confessed my love of carbs so this is a little change of gears for me. This Low Carb Bacon Cheeseburger Soup was created to help my husband out in his weight loss journey . Being married for 18 plus years and all the yummy things I cook has caught up with him and he has decided to try and get a little healthier.  He has proclaimed carbs are the devil and that demon has caused havoc on his weight, so we have purged the pantry and fridge of those unhealthy foods. Usually my oldest son would protest to such a thing but we are coming to the end of high school football season and it’s time for him to watch his weight for wrestling season. The joys of a hangry teenage boy is whole other story in itself for another time.

My husband works full time for the Louisiana National Guard and once a year he does a PT test. This year when he thought he may not survive , he knew it was time to make some changes in his diet and exercise routine. He LOVES a big juicy cheeseburger like any other man . Being hungry and  desperate one day this week he went to a local burger joint and got a bacon cheeseburger and threw away the bun. That is when a light bulb went off .. Bacon Cheeseburger Soup would be a fabulous lunch and meal prepping. My wheels started turning and I thought about the flavors he loves in a burger  and put them into this soup without the guilt. I tried to make this full of flavor and creamy so it is satisfying for someone cutting carbs and wouldn’t feel like they are missing anything . I have packaged this up in plastic containers for easy lunches , my way of meal prepping for him.  Also , I know all the rage is the keto diet so I tried to stay keto friendly.  This is all new to me so I did a lot of research , if there is any problems with following a low carb or keto diet someone please comment and let me know. Let’s get started making this Low Carb Bacon Cheeseburger Soup .. Cut up a pound of bacon. I find it much easier to cook bacon this way when not needing them in whole pieces.

Sliced uncooked Bacon

Cook about a half a pound at a time until nice and crisp

Drain on a paper towel and set aside for later

In a large soup pot cook the ground meat

Once the meat is fully cooked add the beef broth

Add 4 tablespoons of tomato paste..4 tablespoons has 12 carbs..in a large pot of soup not too many carbs

Adding in Tomato paste

Mix all the seasoning together and add to the soup

Bring the soup up to a boil and reduce the heat to medium

Bring up to a boil

Cut the cream cheese in large cubes and add to the soup

Stir this mixture often until the cream cheese is melted

Add 3/4 of the bacon and shredded cheese and stir in

Place the lid on and allow to sit with the burner is off until all the cheese is melted

Add a little extra cheese , bacon and avocado if you like them

Low Carb Bacon Cheeseburger Soup(Keto Friendly)

Ingredients
  

  • 1 Pound Bacon
  • 3 Pounds Ground Meat
  • 32 oz box beef broth
  • 14 oz can beef broth
  • 4 Tablespoons Tomato Paste
  • 8 oz Cream Cheese
  • 1/2 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dill weed
  • 1 1/2 teaspoon garlic powder
  • 1 1/2 teaspoon onion powder
  • Optional Avocado diced

Instructions
 

  • Cut bacon in about one inch pieces
  • Cook bacon until crisp , drain on a paper towel and set aside
  • Cook ground meat in a large soup pot
  • Once ground meat is cooked add the beef broth
  • add tomato paste
  • Mix all the seasoning together and add it
  • Bring the mixture up to a boil and reduce heat to medium
  • Cut cream cheese in large chunks and add to the soup
  • Add Cream
  • Stir often until the cream cheese is melted
  • Add 2 cups of sharp cheddar and bacon-reserve a little of both for toppings if desired
  • Put the lid on and turn the heat off-let sit for 15 minutes until cheese is melted
  • When serving ladle into a bowl and top with a little bacon , cheese and diced avocado if desired
