This Apple Dutch Baby is a delicious twist on a traditional dutch baby pancake. It has tender apples in every bite and full of cinnamon flavor. If you have never made a dutch baby it is one of those things that is so impressive when it comes out of the oven all big and puffy . Then watching it deflate in a amazement, trust me everyone will gasp . My aunt used to call these “Lazy Day Pancakes”, now that I have made 650 million pancakes I totally get this . Once you know a few tricks these are super simple to make. I made this in mind to go with two of my other recipes my Buttermilk Bourbon Syrup and my Vanilla Crown Royal Whipped Cream. This is totally optional but put all these flavors together and you will think you are at a fancy restaurant for brunch.

Tips for making a Dutch Baby

  • This is baked at a high temperature and the skillet needs to be very hot so the pancake will rise correctly
  • The Batter needs to be at room temperature .That means the eggs and milk need to be at room temperature. Popping the milk in the microwave for 15-20 seconds will usually do the trick
  • NO PEAKING.. well you can look in the window but don’t open the door while the pancake is baking
  • Measure all of your ingredients before placing the skillet and butter in the oven so you don’t brown the butter

Let’s Make An Apple Dutch Baby !

Preheat your oven to 400 degrees. Once oven is heated add 2 tablespoons of butter to a 10 inch skillet and place it in the oven. You want the skillet to get nice and hot and the butter will be sizzling.

In a large mixing bowl beat together the eggs and milk until frothy. Then beat in vanilla until blended well. Slowly add flour, sugar, salt and cinnamon. Beat very well and make sure there are no lumps.

Once the butter is sizzling the skillet is hot enough , carefully remove it from the oven. Gently pour the batter into the skillet and place it back in the oven. Set the timer for 20 minutes and don’t peak.batter poured into the skillet

While the pancake is in the oven cook the apple topping. In a skillet melt the butter and place the the pealed , cored and sliced apple the warm butter. Sprinkle the granulated sugar and cinnamon on top of the apples and stir it in. Cook until the apples are soft.

After 20 minutes behold this beauty!! Let it naturally deflate.

Top the pancake with the cooked apple and Sprinkle with powdered sugar.

Top with whipped cream and syrup of your choice…Enjoy!!

Danish Whisk–Love this whisk but any whisk will do

Ingredients
  

Dutch Baby

  • 2 Tablespoons Butter
  • 3 eggs -room temperature
  • 3/4 cup milk-the chill taken off
  • 3/4 cup all purpose flour
  • 1 Tablespoon granulated sugar
  • 2 teaspoons vanilla extracts
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Apple Topping

  • 3-4 Apples of your choice peeled cored and sliced
  • 2 Tablespoons Butter
  • 2 Tablespoons granulated sugar
  • 1/2 teaspoon cinnamon
  • Powdered sugar for dusting -optional
  • syrup of choice -My Buttermilk Bourbon Syrup is a great choice
  • Whipped Cream

Instructions
 

  • Preheat your oven to 400 degrees
  • Once oven is heated add 2 tablespoons of butter to a 10 inch skillet and place it in the oven
  • This is very important if you want your dutch baby to rise correctly make sure your eggs are room temp along with the milk, knock the chill off the milk by running it in the microwave 15-30 seconds
  • In a large mixing bowl beat together the eggs and milk until frothy
  • Beat in Vanilla
  • Slowly add flour, sugar, salt and cinnamon
  • Beat very well until there are no lumps
  • Once the butter is sizzling in the skillet carefully remove it from the oven
  • Gently pour the batter into the hot skillet and place it back into the oven
  • Bake 20-25 minutes

Apple Topping

  • Melt butter in a skillet on medium heat
  • Add peeled , sliced and cored apples
  • Sprinkle sugar and cinnamon on top
  • Stir and cook until apples are soft
  • When the dutch baby comes out of the oven let it slightly deflate
  • Add apples on top
  • Optional..Sprinkle with powdered sugar , top with syrup and whipped cream

I have often read about Dutch baby pancakes but I never made one, nor had I ever seen a fresh-out-of-the-oven picture. It really is a thing of beauty when all puffed up! But it’s gorgeous also filled with those soft apples. It really screams luxurious Sunday breakfast to me!

I make mine in reverse. I first cook the apples stove top in an oven proof pan. When apples are tender, I pour the batter over apples and place in the 425* oven. After 5 minutes, I turn the oven to 350* and cook abbot 20 minutes more. Total cook time about 25 minutes

This is the method I used. Sauteed the apples in the cast iron pan w butter cinn/sugar. Poured batter over top & baked. Next time will sprinkle cinn sugar on batter but otherwise very happy with turnout.
