I love Tuna Casserole but my family doesn’t have the same feelings about my ultimate comfort food. I am all about using what I have on hand so I was digging around in my pantry and came up with this simple Tuna Noodle for Two. This is the perfect serving for two people or one and save a serving for later. During this stay at home order I have had this for lunch a few times and it is so comforting . This is made mostly from pantry items and the box meal can be replaced with what is on hand.

Tuna Casserole

I know this seems like just a plain ole tuna casserole but to me it is pure comfort food. This is exactly how I grew up eating this and it is the first dish I learned to cook. Back in the 80’s helicopter parents really didn’t exist and as a teenager I was left to fend for myself from time to time. Like most comfort foods they usually make you feel good inside and bring back good memories. This dish reminds me of a friend from my teenage years that sadly passed away June 23, 2018 from complications of diabetes at the age of 46 . My friend was a super picky eater and when we got tired of eating whatever we could pick up in a drive thru window this was our go to dish.

This Sloppy Joe Casserole is a super easy dish to throw together on a busy night. It has the classic bold flavor of a sloppy joe but all in one pan. Feeding a family of five I am sucker for easy hearty casseroles and this is an oldie but goody . This is one of those recipes all busy moms should have on their go to recipe list, trust me it will be a family favorite. It has the yummy comforting flavors of a Sloppy Joe but all in one dish. I have been cooking a version of this for years but it is forever changing and this is what it has morphed into today.

Black Eyed Pea Casserole

New Year’s day is a time for starting with a clean slate, out with the old and in with the new. All good southerns know you need to eat black eyed peas on New Year’s day for good luck . I am fortunate that I love black eyed peas, but I know many people that hold their noses and eat a few just because you have to. Lord knows if you don’t terrible luck may be your fate and you just can’t chance that. This Black Eyed Pea Casserole is full of flavor and is a great twist on a southern classic. It is basically a meal on it’s own. Serve it with some cabbage and cornbread and you will be eating like southern queens. Plus you will be lucky and prosperous in the new year, you just can’t test fate.
