Hello, my name is Debbie and I am addicted to peppermint chocolate treats. I last had this heavenly combination ..well ummmm … I am eating a cookie as I type. These Peppermint Mocha cookies are wonderful, and I need something to keep my strength up, LOL!! Seriously , I can not get enough of this Christmas wonderful. Maybe I need an intervention but It is festive and it makes me so happy. My kids are rolling their eyes at another chocolate peppermint cookie. Pumpkin Eggnog Cookies

Apparently eggnog is one of those things that people Hate or Love  . How ?? I am in that LOVE category!   Once I see the rich creamy eggnog hit the shelves I know the holiday season is right around the corner. These Pumpkin Eggnog Cookies are made from….Pumpkin Eggnog.. if you have never tried it you need to. Although I love it ,I have had many baking failures with it. This is year three I have tried to make something with it and finally got a great result. My theory is the high sugar content has given me bad results, that’s my story and I am sticking to it LOL . Chocolate Dipped Pumpkin Cookies

I have combined two of my loves in this Chocolate Dipped Pumpkin Cookie, pumpkin and dark chocolate. A soft cake like  pumpkin spiced cookie mixed with rich dark chocolate is just pure autumn Heaven.  If you have read any of my previous post I am a bit of a chocolate snob and I tend to like higher quality chocolate . I usually like to use Ghiradelli Dark chocolate melting wafers . I rarely melt chocolate in the microwave for many reasons, mainly it ends in disaster for me.  This dipping chocolate melts beautifully in the microwave. Banana Oatmeal Chocolate Chip Cookies

In my mind I knew I needed to be working on something other things but I had some overripe bananas staring at me. At my house I buy bananas and two things happen. Either the are gone in a day and I’m wondering if we got a monkey I didn’t know about , or they sit on the counter and over ripened. This week it was the later of the two.  This is how these Banana Oatmeal Chocolate Chip Cookies were born, nobody ate the bananas.  I have several other recipes if you have bananas you need to use Maple Banana Cake or a little easier Apple Butter Banana Bread.

Autumn Oatmeal Cookies

When the the weather starts getting cool and leaves begin to change it’s time for all the yummy baked goods full of the fall spices. These autumn oatmeal cookies ooze everything about this time of year . They are buttery , chewy and full cinnamon, pecans and dried cranberries and are seriously so good. I added a little apple butter and this gave this cookie ever more of a fall feel. Give me a big cup of warm tea and one these cookies and I am in pure heaven. Another one of my fall favorites is Apple Bread with Cream cheese filling.

Fluffy Chocolate Chip Cookies

I am going to be honest here, I am a cookie fanatic and these cookies are AMAZING!!  Some warm fluffy chocolate chip cookies with a cold glass of milk is pure heaven for this girl. I am getting over a little illness and needed some comfort food…AKA chocolate chip cookies. One of our local super markets has these cookies in their bakery called muffin top cookies that are basically a fluffy cake like cookie. I have been on a quest to figure out how to make something similar . I have searched the internet on how to make cookies fluffier and came up with several ideas. One of the more interesting things I found was adding cornstarch to the flour mixture. I read it would soften the protein in the flour and make a more tender cookie. This little trick plus extra baking powder seems to have worked beautifully. I took my basic chocolate chip cookie recipe and altered it a bit and the results were fluffy, soft and super yummy. Another great cookie to try is Banana Oatmeal chocolate chip cookies.

Red Velvet Heart Cookies

Most people think of Valentines Day and they think of romance , fancy dinners, and flowers. All that is fine but I’m a fat girl so I think of chocolate and all the fabulous desserts that go along with this holiday like these Red Velvet Heart Cookies. Seriously , I expect my favorite chocolates that come in heart shapes and they are hidden in my secret stash drawer for only me , LOL . Since red velvet is basically chocolate with red dye I decided to alter one of my favorite chocolate cut out cookies for this recipe. This is the perfect cookie for the kids to help with and send for classroom treats, or even for your valentine . Another great cookie us Chocolate Dipped Sugar Cookies.
