This rustic Peach Galette is packed full of summer goodness . Easier than a pie but just as delicious served with a scoop of vanilla ice cream. Galettes are just free form tarts that are so much easier than a pie . As long as the edges are folded in and pinched to hold in all of the yumminess you are good.  You can go through the trouble of making your own dough but I find the already made pie crust works beautifully for this recipe . This super easy chocolate cream pie is a chocolate lovers dream and it comes together in minutes.  This cool and creamy pie is so easy a toddler could make it plus it is the perfect dessert all year. I don’t know about you but we love pie and chocolate at my house so this is a pie I make often. Growing up my Dad wasn’t much on cakes but loved pies , so to say the least we had a ton of pies are my house. As an adult I love all desserts but pies still hold a special place in my heart. Unbelievably light and airy this Lemon Cream Pie is a lemon lovers dream. The buttery graham cracker crust serves as a base to a luscious lemon filling that has the perfect balance of sweet and tart. This pie taste like pure sunshine and is the perfect no bake pie anytime of year.  While this pie can be enjoyed anytime of year it just says spring to me. This Creamy Key Lime Pie is baked to perfection in a homemade graham cracker crust and has the perfect balance of sweetness and tang. This is the perfect cool creamy treat that will make you keep going back for more . When I was growing up this type of pie was always in the fridge during the warmer months. My Dad was a pie fanatic and to keep him happy my Mom would a keep simple No bake Lemon or Key Lime pie in the Ice Box. This pie is a little different than those no bake kind, the cream cheese lends a creaminess similar to a cheesecake but not as heavy.

This southern sweet potato pie has just the right amount of sugar and spice, then is  baked to perfection . This pie is a staple in the South during the holidays and even takes the place of pumpkin pie on some dessert tables. Growing up my mother did not make pumpkin pie during the holidays. This was our pie of choice along with Pecan Tassies. This decadent pie is over looked many times during the holiday , but a really don’t know why . The funny thing is if you love pumpkin pies you will adore this rich and creamy pie. The opposite isn’t always true ..weird but true. I haven’t figured out if it’s a flavor or texture thing. This pie is like mashed sweet potatoes but held together slightly with a little spice, a little different from it’s holiday pie cousin. What is the holidays without pumpkin pie? At my house no ordinary pumpkin pie will do , it has the be Pumpkin Pie Supreme. One bite of this pie and you will never look at a plain sad pumpkin pie again without thinking of this lovely pie. You will be ruined and only want this as your holiday pie. This pie has so many layers of yumminess! Next the flakey crust there is a gingersnap and pecan layer , the perfect base for the pie. Then is your typical creamy pumpkin filling topped with a yummy pecan streusel. The perfect Pumpkin Pie supreme!! If you love pumpkin but don’t want a pie give a few of my pumpkin cookies a try. They Pumpkin Eggnog Cookies and Chocolate Dipped Pumpkin Cookies .

Strawberry Mousse Pie

Strawberry Mousse Pie in a pie plate

This Strawberry Mousse Pie is the perfect cool and creamy no bake pie for the warmer months. This pie has a whipped strawberry mousse with strawberries mixed in makes it the perfect pie . Spring has sprung in southern Louisiana!! The azalea bushes have flowers on them and there is a thick coat of pollen on everything in sight. When the weather begins warming up I am ready for fruit and no bake desserts. My favorite is strawberry anything, I love some strawberries. I came up with this Strawberry Mousse Pie last year for our Easter gathering at work by using items I had on hand. It was a huge hit and now it’s one of my favorite pies. Believe me, bring this pie to any gathering and it will be gone in no time.
