Easy Fresh Salsa is such a cinch to make you will never buy the stuff in a jar again. Adjust the spiciness to taste and you will not be able to stop dipping, trust me. Summer is here and that means keeping the groceries stocked for three teenage boys. One of my sixteen year olds was standing in front of my well stocked pantry complaining there was NOTHING to eat. I was a little confused since there was plenty of his favorite foods, I asked what he wanted. His response was there was no chips and dip of any kind . Well OK, that was probably the only thing I didn’t buy. A few days after that we went to a friends house for Memorial Day to BBQ and swim. I made a double recipe of this salsa and basically three teenage boys devoured it while they were in and out of the pool. The adults got a little , but very little.

This salsa is fresh and delicious. Even my youngest son that is super picky and claims he doesn’t like onions inhales this stuff.  If you are feeding a crowd or teenagers this is fairly economical to make and is so much better than what comes in a jar. The salsa itself cost me around $5 to make , that is hard to beat. Not only is it easy on the pocket book it is super easy. I use my Ninja blender but a food processor works just as well.

Let’s Make Easy Fresh Salsa!

Start by adding the can of whole tomatoes along with the juice to your food processor or blender. Roughly chop the onion , jalapeno , and cilantro and add it to the blender. Next add the the fresh lime juice , seasoning and sugar. Always use fresh lime juice it really makes a difference and the little bit of sugar helps cut the acidity. Blend everything together until it is nice and smooth. The salsa is ready to serve or it can be stored in a sealed container in the fridge. This is meant to be served fresh so after storing it for a few days it needs to be discarded. Honestly I have never had to toss any, it is always eaten.

Ingredients
  

  • 28 oz can whole tomatoes
  • 1 medium sized onion
  • 1 Jalapeno-If you want spicer salsa a serrano pepper can be used
  • 1 1/2 cup roughly chopped cilantro it's about 2 fist fulls
  • 3/4 cup fresh lime juice
  • 1 tablespoon sugar
  • 1 teaspoon garlic powder
  • 2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Tortilla chips

Instructions
 

  • In a blender or food processor add the can of tomatoes with the juice
  • Roughly chop the onion in big chunks and add it
  • Roughly chop two fist fulls of cilantro amd add it
  • Cut the steam off the jalapeno and chop the rest of it and add it along with the seeds
  • Squeeze limes until you get 3/4 of cup of juice and add it
  • Add sugar, garlic powder, salt and pepper
  • Blend until smooth
  • Serve immediately with tortilla chips
  • Store any leftovers in the fridge for 2-3 days
