Nutter Butter Football Cupcakes
These Nutter Butter Football Cupcakes are the ultimate treat for the chocolate and peanut butter lover and just in time for football season. All the guys in my house love this combination so when I was making these they were circling the kitchen and waiting . I am a frosting snob and I have passed this trait down to my youngest son , he will only eat homemade creamy peanut butter frosting . He is with me on the no canned frosting rule , making it isn’t that hard and soooo much better.
These are very similar to a cupcake I have been making for years called Nutter Butter and Chocolate Overload that I have posted on Just a pinch. Those cupcakes have been getting rave reviews for years. I took that idea and turned this into a football themed cupcake. The only difference in the cake is I don’t have bits of cookies chopped up into it. I do have a cookie on the bottom though! I found the round nutter butter cookies but if you can’t find a half of a regular cookie on the bottom with work as well.
These sound like a lot of work but they are not that hard at all. Preheat your oven to 350 and line your cupcake tins. Place a nutter butter cookie on the bottom of each liner. Mix the devil’s cake mix according to the boxes directions and put an even amount in each well. Bake for 15 minutes or until done , and cool on a rack.
While the cupcakes are baking make the footballs. Melt the chocolate wafers in a shallow dish, a pie plate works well. Dip a small wooden skewer in the chocolate and poke in the middle of the cookie, I did mine on a angle. Allow them to dry and reheat the chocolate and dip the nutter butter cookies in the chocolate , allowing most of the excess to drip off. Place on wax paper to harden. Once hardened with a fine tip and white frosting draw laces on the cookie to look like a football. Mix the Peanut Butter Frosting and pipe on the the cupcakes with desired tip, I used an open star tip. Using the skewer poke the football into the cupcakes. **Make the frosting peak is pretty high to hide the skewer or you can trim the tip of the skewer off with heavy kitchen shears.

Ingredients
Nutter Butter Footballs
- 24 Nutter Butter Cookies
- 1 pound candy chocolate melts
- White frosting
- small wooden skewers
Chocolate cupcakes
- 24 Round Nutter Butter sandwhich cookies
- Devil's Food chocolate cake mix
- 1 1/4 water
- 1/2 cup vegetable oil
- 3 eggs
Peanut Butter Frosting
- 1 1/2 Cups Butter Room temp
- 1 1/2 Cups Creamy Peanut Butter
- 2 Teaspoons vanilla extracts
- 4 1/2 Cups Powdered sugar
- 3 Tablespoons Milk
Instructions
Cupcake
- Preheat Oven to 350 degrees
- Line cupcake tins and place cookie in the bottom of them
- Mix the devil's food cake mix with oil, water and eggs
- Place cake mix evenly on top of the cookies
- Bake for 15 minutes or until done
Nutter Butter Footballs
- While cupcakes are baking make footballs
- Melt chocolate wafers according to the packages directions
- Dip the skewer in chocolate and poke it in the middle of the cookie at an angle and allow them to cool
- Reheat chocolate and dip the nutter butters on both sides letting the excess drip off and allow to harden on wax paper
- Once the chocolate is hardened using a fine tip and white frosting to make the laces
Peanut Butter Frosting
- Cream together the butter and peanut butter
- add vanilla
- Add one cup of powdered sugar at a time and alternate milk
- Pipe frosting ontop of cupcake with high peaks
- Place skewers with nutter butter footballs
- ** make frosting peaks high to cover skewers if it isn't high enough snip the ends off with heavy kitchen shears
They are really tasty. Perfect to enjoy during a football match.
