Sweet Heat Country Style Ribs

I love boneless country style ribs but my husband usually cooks them on the pit. He is the pit master at my house , but his job keeps him away on the weekends at times. I had a package of these type ribs that needed to be cooked  and an over abundance of jalapenos from my meager garden. I was hungry and using what I had on hand is basically how these Sweet Heat Country Style Ribs were born. I love using different flavors together and sweet and spicy is at the the of the list of being a favorite.

This recipe will go into my ” go to” recipes for easy crock pot meals , we just loved it. The flavors are so yummy and has just the right amount of spice. If spice isn’t your thing this can be easily adjust but cutting back on the amount jalapenos or reduce the amount of seeds. This is super simple and start off by thinly slicing onions and placing them in the bottom of the slow cooker. Place the country style ribs on top of the onions, then toss n the sliced jalapenos on top of the meat.  Reserve 3-4 Tablespoons of BBQ sauce and set aside, empty the rest of it in a bowl. Fill the BBQ sauce container with pineapple juice and shake real well and add tot the BBQ sauce. Add vinegar , chili powder, salt, pepper , red pepper and stir well, Pour Over the ribs and cook for 4 hours on high or 8 hours on low. Carefully remove ribs and place them on a baking sheet and baste them with BBQ sauce. Place them under a broiler for about ten minutes or until they are caramelized a little bit. Ingredients
  

  • Country Style Boneless Pork Ribs-Around 4-6 pounds
  • 1 Medium Onion
  • 2 Jalapenos
  • 1 18 oz Bottle original Baby Ray's Barbecue sauce
  • 1 cup Pineapple juice
  • 2 Tablespoon Apple cider vinegar
  • 1 Tablespoon Chili Powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper

Instructions
 

  • Thinly Slice the onions and place them in the bottom of a crock pot
  • Place the ribs on top of the onions
  • Slice Jalapenos and place sliced them on top of the meat
  • Reserve about 3-4 Tablespoons of BBQ sauce and set aside
  • Pour the rest of the BBQ Sauce into a bowl
  • Pour one cup of pineapple juice in the empty bottle of BBQ sauce and shake well, pour it into the bowl with the sauce
  • Add the chili powder, salt, pepper, red pepper, and vinegar to the bowl.
  • Mix well, pour sauce mixture over the ribs. Make sure the sauce gets to the bottom with the onions
  • Cook on high for 4 hours or low 8 hours
  • When done carefully place the ribs on a foil lined baking sheet
  • Bast the ribs with the reserved BBQ sauce
  • Place under the broiler on the top rack of the oven until they slightly get brown , mine took about 5-7 minutes on high
  • Serve with the cooked onions and jalapenos
