Start by cut caramel candies into pieces and placing them in a mixing bowl,

Bring Heavy cream up to a boil and remove from heat.

Pour Hot cream over caramel pieces and allow to sit for 5 minutes.

After 5 minutes stir with a wire whisk until incorporated.

Place bowl into an Ice water bath and beat with an mixer until smooth and creamy.

This creamy caramel ganache is great drizzled over cakes, Ice cream  or used as a apple dip .
