This Prime Rib Soup is full of leftover tender chunks of meat floating in a hearty bone broth. It is meat and potatoes in a soup and the perfect way to use those precious leftovers.

This recipe is versatile and is to be tailored to what you have leftover. Here are the basics.

First boil the ribs to get a nice bone broth. While they are boiling Slice onions, mushrooms and potatoes. .

In a pan cook onions well . Once they are onion add mushrooms and garlic.

Remove ribs from the broth. Add diced prime rib , onion mixture and dice potatoes to the broth. Cook until potatoes are done . Add salt and pepper to taste.
