Pumpkin Bread

This is a great basic Pumpkin Bread that is tender and loaded with warm pumpkin flavor and spices. I adore quick breads, they come together easily and are very versatile.  They can be served as a light dessert , breakfast with a cup of coffee , or an afternoon snack with a cup of tea. So this a great basic pumpkin bread with no frills and no fancy equipment needed . Just basic stuff most of us have on hand .. a mixing bowl , wire whisk and rubber spatula.  If you are like me I mostly like just plain bread but sometimes I like a little something extra. I gave a list of extra optional add ins ..I like to add dried  cranberries and pecans on occasion.

Add 1-1 1/2  cups of these optional ingredients to change things up a bit .

  • Pecans
  • walnuts
  • golden raisins
  • dried cranberries
  • Chocolate chips
  • white chocolate chips

 

Let’s Make Pumpkin Bread!

 

Ingredients for pumpkin bread

Gather your simple ingredients ! Preheat oven to 350 degrees and spray a loaf pan with Baker’s Joy or something similar.

In a mixing bowl beat with a wire whisk the sugar , an egg and oil until smooth

Pumpkin Added to the sugar mixture

Add canned pumpkin and beat until smooth

Dry ingredients added to the pumpkin mixture

Add the flour , baking soda , baking powder , salt , pumpkin spice and cinnamon

Everything mixed for the pumpkin bread

Stir until smooth using a whisk and rubber spatula. At this point you can add optional add ins

Pour into the prepared loaf pan and bake in the preheated oven for 55-60 minutes.

Let Cool 10 minutes and remove from pan

Let cool before slicing and Enjoy. These breads freeze well once wrapped in plastic and in a ZipLock bag it will freeze for about two months. These make great holiday favors and hostess gifts as well

Ingredients
  

  • 1 Egg
  • 1 1/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 1 1/2 cups all purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon of pumpkin spice
  • 1/2 teaspoon cinnamon

Instructions

  • Allow to cool on before slicing

Notes

This is a great basic pumpkin bread recipe and here are some suggestions of optional add ins . 1-1 1/2 cups of these ingredients can be added alone or in combination. 
  • Golden Raisins
  • Dried cranberries
  • pecans
  • walnuts 
  • chocolate chips
  • white chocolate chips
This bread freezes well . Wrap it well in plastic wrap and then place in a ziplock for up to 2 months in the freezer.  
These also make great holiday favors and hostess gifts.
