I fell in love with Reuben Egg Rolls while on a trip and had to make some . This past February I went on a girls trip to Destin , Florida.  Why a beach trip in February? Because it is BEAUTIFUL anytime of year!! While there we ate at local Irish restaurant and I was introduced to these Reuben Egg Rolls .  They were amazing! Even the picky eaters in my group liked them. I knew when I got home I needed to replicate these babies. My family adored them including my young great nephew . These would be great for any occasion that snacks are required and would be perfect for St. Patrick’s Day. Another great dish for parties and much easier is my Pineapple Jalapeno Meatballs .

Let me start off by saying if you love the flavor of a Reuben sandwich you will adore these Reuben Egg Rolls . Even if you don’t just try these, it might make a believer out of you. The inside is creamy and has lots of corned beef and is sweetened up with dressing. The sweetness is balanced out with the subtle flavor from the sauerkraut.

Start by draining and squeezing the sauerkraut as dry as possible. Then dice the corned beef and place all of the filling in a mixing bowl.

Either mix with a large spoon or hand mixer until blended. It is so much easier to use a hand mixer !

Now time to roll, it really isn’t that hard. Lay the wrapper with one corner pointing toward you, it will look like a diamond. Place a heaping Tablespoon of filling in the center of the wrapper. With your wet finger run a little water around all of the edges. Fold the corner closest to you over the filling. Then fold the left and right side to the center. Roll it closed and make sure the egg roll is sealed. Roll all your egg rolls before beginning the frying process.

How to roll Reuben Egg Rolls

Heat the prepared skillet with about 2 inches of oil to 375 degrees. Gently drop egg rolls in the grease with the seam side down. Once they start to brown flip them over and let them brown on the other side.

When they are golden brown on both side from them from the grease and allow to drain on paper towels.

Serve with a little extra Thousand Island dressing for dipping. Enjoy!!

Reuben Egg Rolls

These Reuben Egg Rolls have a creamy filling and is slightly sweet but balanced my the sauerkraut. Fried to golden perfection and good for any occasion !

Ingredients
  

  • 8 oz Corned Beef- From the deli Thinly sliced
  • 4 oz cream cheese -Room Temperature
  • 1/2 cup Thousand Island Dressing
  • 1 cup shredded Swiss Cheese
  • 1 cup Sauerkraut
  • 12 Egg Roll wrappers
  • Vegetable Oil for Frying
  • Small bowl of water for wrapping

Instructions
 

  • Prepare a frying pan with a few inches of oil
  • Drain and squeeze all the liquid out of the sauerkraut
  • Dice the deli corned beef
  • In a mixing bowl combine the diced corned beef , cream cheese, 1/2 cup of thousand island dressing, 1 cup shredded Swiss cheese and drained sauerkraut
  • Either mix with a large spoon or hand mixer until blended

  • Note..It is really hard to understand how to roll these without visuals. I have pictures but I rolled them like traditional egg rolls. There are many how to videos on the internet.

Notes

If you have never rolled an egg roll and don't understand my directions I rolled these like traditional egg rolls . There are thousands a tutorials online
These are best served warm so fry them right before serving. They can be kept warm in a pan in a low heated oven or warming drawer for a short period of time

huh. I would never have thought to put these ingredients into an egg roll or that they were ‘Irish’ but I guess it works. I would love a pile of these to try.

This is such a clever recipe! Love this idea, especially if there is sauerkraut involved (I love this stuff!). Would be perfect to serve at any gathering!

Reuben Sandwiches are one of my favorite things ever, so I knew I had to try these. They are delicious! Just like a reuben sandwich but inside a crispy shell. Love it!

I made these for the super bowl and they were delicious. It was just my husband, daughter and myself but when I saw the recipe I HAD to made them! I love reuben’s and these were amazing. I had quite a few leftover though because I had so many other things to eat for super bowl, so I would like to know if you have ever frozen these for later. I mean I’ve made egg rolls before and frozen them for later use, but I was wondering what you thought? Thank you so much for a wonderful and easy recipe!! I will make these again and again!
