Texas Caviar is a fun dip with black eyed peas as its base and corn to add a touch of sweetness. All of the veggies not only add flavor it adds a certain freshness. The cilantro and spices give this a wonderful Tex-Mex feel  .All this is tossed with a homemade vinaigrette to make a zesty dip to serve with Tortilla chips. The first time I had this yummy concoction was in the 1990’s when my Aunt brought it to one of our engagement parties. In my normal family fashion she made a GIANT bowl of this so we had leftovers. My soon to be husband fell in love with this and it has became a staple at my house for over twenty years . It can be found at our New Year’s Eve parties on to our summer cookouts , it is great for any occasion. It was years later I found out this is also called Cowboy Caviar. No mater what you call it , it is delicious . A great compliment to this dip is my Tex-Mex Layered Dip , both are always party favorites.

Let’s Make Texas Caviar !

This is a simple recipe and you only need a few items other than the Ingredients

 

Ingredients for Texas Caviar

Drain and rinse the black eyed peas, corn and black beans then toss them together in a large mixing bowl.

Dice the onion , bell pepper , jalapeno and cilantro , add the to the mixing bowl and toss together

Diced Onions , diced bell pepper , diced jalapeno and minced cilantro added to black eyed pea mixture

In a medium mixing bowl whisk together the vinegar , olive oil , lime juice , honey and spices. This spices help give that Tex Mex feel.

Pour vinaigrette over the salad and toss well.

Serve immediately with tortilla chips. Or cover , chill and let marinate for a few hours. It’s even better after it sits up in the fridge for a few hours. This recipe does well stored in the fridge for 4-5 days.

This is great served with tortilla chips, Frito Scoops, or even your favorite. White this is typically  served as a dip is it also great over your favorite fish , chicken or even salad topper.

Ingredients
  

  • 2 cans black eyed peas drained and rinsed
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 3/4 cup red onion diced
  • 3/4 cup red bell pepper diced
  • 1 Jalapeno seeded and diced
  • 1/2 cup Cilantro -Minced More or less to taste

Dressing

  • 1/2 cup Apple Cider vinegar
  • 3 Tablespoons olive oil
  • 1 tablespoon lime juice
  • 2 tablespoons honey
  • 1/2 teaspoon cumin
  • 1 teaspoon garlic powder

Instructions

For an extra kick you can use black eyed peas with Jalapenos 
This holds up well in the fridge for about 4 to 5 days. .
This is also great with Frito scoops or even your favorite crackers.
