Brunch Quesadillas

Ingredients
  

  • 1 Tablespoon Olive Oil
  • 1 small onion diced
  • 1/2 cup diced red bell pepper
  • 1 cup diced ham leftover ham is perfect
  • 2 cups fresh spinach
  • Shredded cheddar cheese
  • Tortillas
  • Butter
  • 6 eggs scrambled
  • salsa optional

Instructions
 

  • In a medium skillet heat olive oil over medium heat
  • Add onions and bell pepper to the pan and cook until the onions are soft
  • Add diced ham
  • Once the ham is hot add the fresh spinach and stir until the spinach is wilted
  • Remove from heat and set aside
  • Scramble the eggs to your liking
  • In a small skillet heat a pat of butter and allow it to melt
  • add a tortilla to the skillet
  • On half the tortilla add a spoon full of the spinach and ham mixture
  • Then add a spoon full of eggs and cheese ontop of the ham mixture
  • Fold the other half over and cook on both sides until the outside is crisp and cheese is melted
  • Serve alone or with salsa
