Southern Sweet Potato Pie

This southern sweet potato pie has just the right amount of sugar, spices and baked to perfection . This pie is a staple in the South during the holidays.

Ingredients
  

  • 1 Deep Dish pie Crust
  • 2 cups Mashed Sweet Potatoes *see note
  • 3 Eggs
  • 1/2 cup evaporated milk
  • 1 cup granulated sugar
  • 1 Teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 Teaspoon vanilla

Instructions
 

  • Preheat your oven to 350 degrees
  • In a medium to large mixing bowl beat the eggs and evaporated milk until frothy
  • Beat in sugar , cinnamon, ginger , nutmeg and salt
  • Mix in Vanilla and mashed sweet potatoes , mix until smooth
  • Pour sweet potato filling into a prepared deep dish pie crust
  • Bake in a preheated 350 degree oven for one hour
  • Allow to cool completely before slicing
  • Serve alone or with whipped cream

Notes

Mashed Sweet potatoes can be prepared how ever you like . For this recipe I used canned sweet potatoes , drained and mashed . Two cups is equal to 2 -15oz cans or 1 29oz can. 
If you decide you want fresh sweet potatoes for this pie 2 cups is about 3 medium sweet potatoes. The can be baked or boiled .
