This southern sweet potato pie has just the right amount of sugar, spices and baked to perfection . This pie is a staple in the South during the holidays.
In a medium to large mixing bowl beat the eggs and evaporated milk until frothy
Beat in sugar , cinnamon, ginger , nutmeg and salt
Mix in Vanilla and mashed sweet potatoes , mix until smooth
Pour sweet potato filling into a prepared deep dish pie crust
Bake in a preheated 350 degree oven for one hour
Allow to cool completely before slicing
Serve alone or with whipped cream
Notes
Mashed Sweet potatoes can be prepared how ever you like . For this recipe I used canned sweet potatoes , drained and mashed . Two cups is equal to 2 -15oz cans or 1 29oz can. If you decide you want fresh sweet potatoes for this pie 2 cups is about 3 medium sweet potatoes. The can be baked or boiled .
