Slow Cooker Chicken Fajitas

 These Slow Cooker Chicken Fajita have all the wonderful flavor but the slow cooker does all of the work.  So easy and delicious this is a must try.

Ingredients
  

  • 2 LB Boneless Skinless Chicken Breast * See Notes
  • 1 Packet Fajita Seasoning
  • 2 Tablespoons Water
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Fresh Lime Juice
  • 2-3 Bell Peppers of your choice *see notes
  • 1 Large Yellow Onion
  • 1 can Rotel Tomatoes
  • Flour Tortillas

Instructions
 

  • Cut Onions and Bell Peppers in long strips and place them in the bottom of the slow cooker
  • Pour the can of Rotel Tomatoes on top
  • Place the boneless Skinless Chicken Breast On Top of the mixture
  • In a small bowl whisk together the fajita seasoning , lime juice, water and olive oil
  • Pour the seasoning mixture evenly over the chicken breast
  • Place the lid on the slow cooker and cook
  • Cook on Low for 4-6 hours or High 3-4 hours
  • Once the chicken breast are done carefully remove with tongs to a cutting board
  • Cut or shred meat and place it back into the slow cooker with the veggie mixture to keep warm
  • Serve with warm flour Tortillas
  • Store leftovers in fridge up to 3 days

Notes

If you want your chicken to cut more into strips and not shred I find that a thin cut or a pounded flat chicken breast works best and cook at the lower end of the times
Use your favorite combination of bell pepper . I find the green bell pepper is strong but it is nice mixed with other bell peppers
