Pumpkin Bread

 This is a great basic Pumpkin Bread that is tender and loaded with warm pumpkin flavor and spices. This is quick bread taste of fall.

Ingredients
  

  • 1 Egg
  • 1 1/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 1 1/2 cups all purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon of pumpkin spice
  • 1/2 teaspoon cinnamon
  • *See notes for optional add ins

Instructions
 

  • Preheat oven to 350 degrees and spray a loaf pan with Baker's Joy or something similar
  • In a mixing bowl beat with a wire whisk the sugar , an egg and oil until smooth
  • Add canned pumpkin and beat until smooth
  • Add the flour , baking soda , baking powder , salt , pumpkin spice and cinnamon
  • Stir until smooth using a whisk and rubber spatula
  • At this point you can add optional add ins
  • Pour into the prepared loaf pan
  • Bake in the preheated oven for 55-60 minutes
  • Let Cool 10 minutes and remove from pan
  • Allow to cool on before slicing

Notes

This is a great basic pumpkin bread recipe and here are some suggestions of optional add ins . 1-1 1/2 cups of these ingredients can be added alone or in combination. 
  • Golden Raisins
  • Dried cranberries
  • pecans
  • walnuts 
  • chocolate chips
  • white chocolate chips
This bread freezes well . Wrap it well in plastic wrap and then place in a ziplock for up to 2 months in the freezer.  
These also make great holiday favors and hostess gifts.
