Texas Caviar

Texas Caviar dip a flavorful dip with black eyed peas as it's base. It's loaded with fresh veggies and toss with a zesty vinaigrette .

Ingredients
  

  • 2 cans black eyed peas drained and rinsed
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 3/4 cup red onion diced
  • 3/4 cup red bell pepper diced
  • 1 Jalapeno seeded and diced
  • 1/2 cup Cilantro -Minced More or less to taste

Dressing

  • 1/2 cup Apple Cider vinegar
  • 3 Tablespoons olive oil
  • 1 tablespoon lime juice
  • 2 tablespoons honey
  • 1/2 teaspoon cumin
  • 1 teaspoon garlic powder

Instructions
 

  • Drain and rinse the black eyed peas, corn and black beans then toss them together in a large mixing bowl.
  • Dice the onion , bell pepper , jalapeno and cilantro , add the to the mixing bowl and toss together .
  • In a medium mixing bowl whisk together the vinegar , olive oil , lime juice , honey and spices.
  • Pour vinaigrette over the salad and toss well.
  • Serve immediately with tortilla chips. Or cover , chill and let marinate for a few hours. It's even better after it sits up in the fridge for a few hours.
  • This is also great served over your favorite fish , chicken or salad.

For an extra kick you can use black eyed peas with Jalapenos 
This holds up well in the fridge for about 4 to 5 days. .
This is also great with Frito scoops or even your favorite crackers.
