Cut bacon in about one inch pieces
Cook bacon until crisp , drain on a paper towel and set aside
Cook ground meat in a large soup pot
Once ground meat is cooked add the beef broth
add tomato paste
Mix all the seasoning together and add it
Bring the mixture up to a boil and reduce heat to medium
Cut cream cheese in large chunks and add to the soup
Add Cream
Stir often until the cream cheese is melted
Add 2 cups of sharp cheddar and bacon-reserve a little of both for toppings if desired
Put the lid on and turn the heat off-let sit for 15 minutes until cheese is melted
When serving ladle into a bowl and top with a little bacon , cheese and diced avocado if desired
