These Reuben Egg Rolls have a creamy filling and is slightly sweet but balanced my the sauerkraut. Fried to golden perfection and good for any occasion !
Drain and squeeze all the liquid out of the sauerkraut
Dice the deli corned beef
In a mixing bowl combine the diced corned beef , cream cheese, 1/2 cup of thousand island dressing, 1 cup shredded Swiss cheese and drained sauerkraut
Either mix with a large spoon or hand mixer until blended
Prepare the Egg Roll
Lay the wrapper with one corner pointing toward you, it will look like a diamond
Place a heaping Tablespoon of filling in the center of the wrapper
With your wet finger run a little water around all of the edges
Fold the corner closest to you over the filling
Then fold the left and right side to the center
Roll it closed and make sure the egg roll is sealed
Roll all your egg rolls before the frying process
Note..It is really hard to understand how to roll these without visuals. I have pictures but I rolled them like traditional egg rolls. There are many how to videos on the internet.
Frying
Heat the prepared skillet to 375 degrees
Gently drop egg rolls in the grease with the seam side down
Once they start to brown flip them over and let them brown on the other side
After they are golden brown on both sides remove them from the grease and allow to drain on paper towels
Serve with a little extra Thousand Island dressing for dipping

If you have never rolled an egg roll and don't understand my directions I rolled these like traditional egg rolls . There are thousands a tutorials onlineThese are best served warm so fry them right before serving. They can be kept warm in a pan in a low heated oven or warming drawer for a short period of time
