Banana Oat Muffins

- 1/3 Cup Vegetable Oil
- 1 Egg
- 1/2 cup Light Brown Sugar
- 2 over ripe bananas
- 1 Cup Old Fashion oats
- 1/2 cup milk
- 1 teaspoon vanilla extracts
- 1 1/2 cup All purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
Oat Topping
- 1/2 cup oats
- 1/4 teaspoon cinnamon
- 2 Tablespoons Light Brown Sugar
- 2 Tablespoons Melted butter
Preheat oven to 350 degrees and spray one muffin pan with 12 wells
In a Large mixing bowl beat with a whisk by hand oil , egg and light brown sugar until creamy
Mash bananas on a plate with a fork very well and add it to the bowl and mix well
Mix in oats , vanilla and milk
Add Flour, baking powder, baking soda , salt, cinnamon, and mix well
Fill the 12 muffin wells evenly
In a small bowl mix the oats, cinnamon, brown sugar and melted butter
Top each muffin with the oats mixture evenly
Bake in preheated oven for 20 minutes or until slightly brown
Let muffins cool in pan for 10 minutes and carefully lift each muffin out and cool on a wire rack
