Banana Oat Muffins

Ingredients
  

  • 1/3 Cup Vegetable Oil
  • 1 Egg
  • 1/2 cup Light Brown Sugar
  • 2 over ripe bananas
  • 1 Cup Old Fashion oats
  • 1/2 cup milk
  • 1 teaspoon vanilla extracts
  • 1 1/2 cup All purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon

Oat Topping

  • 1/2 cup oats
  • 1/4 teaspoon cinnamon
  • 2 Tablespoons Light Brown Sugar
  • 2 Tablespoons Melted butter

Instructions
 

  • Preheat oven to 350 degrees and spray one muffin pan with 12 wells
  • In a Large mixing bowl beat with a whisk by hand oil , egg and light brown sugar until creamy
  • Mash bananas on a plate with a fork very well and add it to the bowl and mix well
  • Mix in oats , vanilla and milk
  • Add Flour, baking powder, baking soda , salt, cinnamon, and mix well
  • Fill the 12 muffin wells evenly
  • In a small bowl mix the oats, cinnamon, brown sugar and melted butter
  • Top each muffin with the oats mixture evenly
  • Bake in preheated oven for 20 minutes or until slightly brown
  • Let muffins cool in pan for 10 minutes and carefully lift each muffin out and cool on a wire rack
