Fresh Peach Pie

This fresh peach pie is a summer must. It has a flaky crust that hold the warm fragrant peaches. Perfect with a scoop a vanilla ice cream or whipped cream.

  • 1 Package of 2 count pie crust
  • 4-5 cups fresh peeled and sliced peaches about 8-10 medium peaches
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup all purpose flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extracts


  • Preheat oven to 400 degrees
  • Line a pie plate with one pie crust and set aside
  • Place pealed and sliced peaches in a large bowl
  • Add both sugars , flour, cinnamon, ginger , salt and vanilla.
  • Gently stir until mixed well
  • Spoon peach mixture into prepared pie plate
  • Top the pie with the second crust however you desire. I cut the second crust and did a lattice design but this is your choice. If you used the whole crust make sure to cut slits in it.
  • To prevent over browning place a pie crust shield or foil around the outer edges of the crust
  • Bake in preheated oven for 55 minutes, removing the pie crust shield the last 10 minutes
  • Allow to cool before slicing
  • Serve alone or with whipped cream or ice cream
