Preheat oven to 350 degrees and spray a loaf pan with Baker's Joy or something similar
In a mixing bowl beat with a wire whisk the sugar , an egg and oil until smooth
Add canned pumpkin and beat until smooth
Add the flour , baking soda , baking powder , salt , pumpkin spice and cinnamon
Stir until smooth using a whisk and rubber spatula
At this point you can add optional add ins
Pour into the prepared loaf pan
Bake in the preheated oven for 55-60 minutes
Let Cool 10 minutes and remove from pan
Allow to cool on before slicing
Notes
This is a great basic pumpkin bread recipe and here are some suggestions of optional add ins . 1-1 1/2 cups of these ingredients can be added alone or in combination.
Golden Raisins
Dried cranberries
pecans
walnuts
chocolate chips
white chocolate chips
This bread freezes well . Wrap it well in plastic wrap and then place in a ziplock for up to 2 months in the freezer. These also make great holiday favors and hostess gifts.
