Place the pork roast in a slow cooker and add the minced onions , garlic powder, salt and pepper.
Add the Dr Pepper and about 1/2 of the bottle of Sweet Baby Rays BBQ sauce
Cover and cook 4-5 hours on high or 7-8 hours on low. The meat should be tender
Remove the roast from the slow cooker and shred it with 2 forks in a plan. Add remaining BBQ sauce and juices from the slow cooker until it is to desired consistency.
This is ready to serve immediately . The juices can be drained from the slow cooker and meat added back to keep warm. We like ours served in a bun with coleslaw.
For this recipe I used a pork loin but I have also used the more tradition pork butt or shoulder roast. I honestly got what was on sale and I always recommend this. This is fantastic on a bun with a little coleslaw. Check out my simple sugar free coleslaw.
