This creamy fruit salad is the perfect way to celebrate fresh summer produce. Tossed in a light yogurt dressing with honey, lemon, and mint, it’s cool, refreshing, and bursting with fruity flavor.
20ozPineapple Tidbits Drained -Reserve 2 TBS of juice
15ozMandarian oranges drained
Mint leaves for garnish
Creamy Dressing
1 cupPlain Yogurt
1/3-1/2cuphoneyAccording to how sweet you like it
2Tablesppons Pineapple Juice Reserved from the canned pineapple
1TBSP Lemon Juicefresh
1teaspoon Lemon Zest
1Tablespoon Mint minced
Instructions
In a large mixing bowl gently toss together the strawberries , grapes , blackberries , blueberries , pineapple , and oranges .
2 cups strawberries , 2 cups red grapes, 10 oz Blackberries , 1 cup blueberries , 20 oz Pineapple Tidbits , 15 oz Mandarian oranges
In a seperate bowl whisk together the yogurt , honey , pineapple juice , lemon juice and zest, and minced mint. I recommend adding 1/3 cup of honey if you like it sweeter add up to a 1/2 cup .
1 cup Plain Yogurt , 1/3-1/2 cup honey, 2 Tablesppons Pineapple Juice , 1 TBSP Lemon Juice, 1 teaspoon Lemon Zest , 1 Tablespoon Mint
Pour the sauce over the fruit and gently toss until all of the fruit is coated
Cover and chill for 1 hour
This is optional but you can sprinkle a little extra mint ontop right before serving
