These soft and chewy Funfetti Easter Cookies are full of pastel sprinkles and M&Ms . They are not only adorable they are a delicious addition to all of you Easter desserts .
Preheat oven to 350 degrees and line a large baking sheet with parchment paper .
In a medium bowl whisk together the flour , corn starch , barking powder , baking soda and salt . Set aside .
In a separate bowl or stand up mixer cream together the butter and both sugars . Mix until light and fluffy .
Add one egg at a time , mixing well in between,
Mix in vanilla
Add about a third of the flour at a time mixing as you go. Mix until just combined , do not over mix.
Mix in Spring Sprinkles
Gently fold in M&Ms
Scoop out about a tablespoon of cookie dough and place on the prepared baking sheet about two inches apart .
This is optional but you can add extra M&M's to the top of the cookie dough
Bake in a preheated oven for 11-13 minutes -Mine are perfect at 11 minutes
Allow to cool for 5 minutes in the baking sheet and transfer them to a cooling rack .
Notes
I used the pastel Jimmy type sprinkles but any type will do . I found mine at Michael's . This is a large recipe and you will need to bake several baking sheets of cookies . If you have only one baking sheet make sure it is completely cool before adding the dough for the next batch . I have two trays I alternate . This recipe can easily be cut in half .
