I don’t know about all of you but cookies are the ultimate dessert at my house . They are a quick and portable dessert that kids and adults love . I make these and put them on a nice platter and watch them disappear . They are so irresistible that every time you walk by you will want to snag one . This recipe is my basic cookie that I developed for my ever so popular Fluffy chocolate chip cookies . I took away the chocolate chips and added spring sprinkles and Pastel M&Ms for that pop of spring time color .Viola the perfect cookie for Easter and all of spring .

What you will need to make Funfetti Easter Cookies
- All Purpose Flour -I used King Arthur unbleached
- cornstarch -this helps with the cake like texture
- baking powder
- baking soda
- salt
- unsalted butter -Only use real butter
- brown sugar
- granulated sugar
- eggs
- Pure Vanilla extracts
- Pastel or spring sprinkles
- Pastel Blend M&Ms
- Stand up mixer or hand mixer

Let’s Make Funfetti Easter Cookies !
Start by preheating your oven to 350 degrees and line a baking sheet with parchment paper .

- 1-In a medium mixing bowl whisk together the flour , corn starch , salt , baking powder , and baking soda . Set aside
- 2-Cream together the butter and both sugars . Beat together until nice and fluffy .
- 3-Add one egg at a time beating in between until well incorporated
- 4-Beat in vanilla

- 5-Add 1/3 of the flour at a time mixing in between
- 6 -Stir in the easter sprinkles
- 7-Gently fold in the M&Ms , careful not to break them
- 8-Scoop out the dough and place it about 2 inches apart on parchments lined baking sheet

This is optional but you should have extra M&M’s you can place on top of the cookies. Bake in a preheated 350 degree oven for 10-15 minutes. I check for doneness at 10 minutes. In my oven mine are perfect at 11-12 minutes .

Cool for 5 minutes on the baking sheet and then transfer them to a cooling rack .

Store in an airtight container for for 3-5 days .If making ahead you can freeze these for up to 3 months .

Funfetti Easter Cookies
Ingredients
- 3 cups all purpose flour
- 1 Tablespoon Corn Starch
- 1 1/2 teaspoons baking powder
- 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter Room Temp
- 2 large eggs Room Temp
- 3/4 cup light brown sugar
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extracts
- 1/2 cup Easter Sprinkles See Notes
- 1 cup Easter Spring mix M&Ms
Instructions
- Preheat oven to 350 degrees and line a large baking sheet with parchment paper .
- In a medium bowl whisk together the flour , corn starch , barking powder , baking soda and salt . Set aside .
- In a separate bowl or stand up mixer cream together the butter and both sugars . Mix until light and fluffy .
- Add one egg at a time , mixing well in between,
- Mix in vanilla
- Add about a third of the flour at a time mixing as you go. Mix until just combined , do not over mix.
- Mix in Spring Sprinkles
- Gently fold in M&Ms
- Scoop out about a tablespoon of cookie dough and place on the prepared baking sheet about two inches apart .
- This is optional but you can add extra M&M's to the top of the cookie dough
- Bake in a preheated oven for 11-13 minutes -Mine are perfect at 11 minutes
- Allow to cool for 5 minutes in the baking sheet and transfer them to a cooling rack .

These don’t have preservatives so they will stay fresh for about 3 days in a sealed container . After that they start tasting a little stale .
Yes , these can be froze for up to 3 months . Just when you are ready to serve them , bring them to room temp to let them defrost .
I used the jimmy type sprinkles but any type of pastel sprinkles will work for the funfetti.
