Leftover Steak Quesadillas
These Leftover Steak Quesadillas are by far my favorite way to use leftover steak. Oozey cheese in a warm tortilla with onions and mushrooms. YUMM!

- Leftover steak of any kind or Prime Rib cubed small
- 1/2 cup Yellow Onion diced
- 8 oz mushrooms sliced
- 1 teaspoon minced garlic
- 4 Large Flour Tortillas burrito sized
- 8 oz Monterrey jack cheese or your favorite cheese -grate your own
- 1 tablespoon olive oil
- red wine beef broth or water to deglaze pans
- 4 Tablespoons butter divided
Prepare your ingredients by grating the cheese, dicing the steak in tiny pieces, and slicing your onions
In a skillet heat a tablespoon or so of olive oil and cook your onion, mushrooms and garlic on medium heat.
Deglaze your pan occasionally with wine or water . Cook until the onions are done to your liking
Once the veggies are done to your liking add the cubed steak . Cook until the meat is heated well.
Start heating a large skillet or griddle on medium heat with add a tablespoon of butter
Add the tortilla to the skillet . On one side add a layer of cheese , meat mixture and then top it with a little more cheese .
Fold the tortilla over and brown bottom of the tortilla
Carefully carefully flip and brown the other side
Slice in half to serve .
I say 8 oz of cheese but if you like cheese have more available .
This is a very basic recipe that any leftover meat can be used
