Heat Olive oil in a heavy bottom dutch oven and add onions and garlic
1 Tablespoon Olive Oil, 4 cloves garlic , 1 medium onion
Once the onions are getting soft ad the tomato paste and sun dried tomatoes . Cook for a few minutes until the tomato paste is incorporated .
2 Tablespoons Tomato Paste, 1/2 cup sun dried tomatoes
Slowly add the chicken stock
64 oz Chicken stock
Add salt , pepper , red pepper , and Italian seasoning bring up to a boil.
2 teaspoons salt , 1/2 teaspoon black pepper , 1/2 teaspoon red pepper flakes, 2 teaspoons Italian seasoning
Add gnocchi and chicken , turn down to medium for 10 minutes
2 cups cooked chicken , 16 oz Gnocchi
Once the gnocchi is cooked add the spinach and let it wilt
5 oz fresh baby spinach
Once the spinach has wilted add half and half , boursin cheese and parmesan cheese . Stir until everything is incorporated ,
1 cup half and half , 5.3 oz Boursin cheese , 1/2 cup Parmesan cheese
Serve warm with a little extra parmesan cheese on top .
