This old fashioned carrot salad is made with grated carrots, raisins, pineapple, and a creamy mayo dressing. This nostalgic salad has the perfect balance between sweet and tangy.
1/2cup hot water discard after the raisins are plump
4 cupsCarrots freshly grated
20ozPineapple chunks drained
Dressing
3/4cupmayo
1Tablespoons Honey
1 teaspoon apple cider vinegar
1/2teaspoon salt
Instructions
Put the raisins in a small bowl and pour hot water over them . Cover with plastic wrap and let them set while you prepare everything else
1/2 cup Raisins , 1/2 cup hot water
Wash and peel carrots . Grate them by hand , with a food processor or any other method you have available .
4 cups Carrots
In a small bowl whisk together the dressing .
3/4 cup mayo, 1 Tablespoons Honey, 1 teaspoon apple cider vinegar, 1/2 teaspoon salt
In a large mixing bowl combine the carrots , drained raisins , and drained pineapple
4 cups Carrots , 20 oz Pineapple chunks , 1/2 cup Raisins
Pour the mixed dressing over the salad
Mix well and chill for at least 3-4 hours before serving .
Store in the fridge in a covered container for up to 3 days .
