This salad brings back memories of my childhood , it made an appearance at most Pot Lucks , BBQs and even my school cafeteria. When I was a kid I would not eat this but when I got older and finally tried it , it was love at first bite . I am also old enough to remember when the carrot salad was on the menu at Chick fil a . - Raisins – I used golden raisins but any will do
- Pineapple -I used chunks but tidbits will work
- Mayo
- Honey
- salt

Let’s make Old Fashioned Carrot Salad !

Place the raisins in a small bowl and cover them from with hot water . Cover the bowl with plastic wrap and let them set while you clean the carrots. Clean the carrots by peeling them and cutting the ends off , then grate them.

In a small bowl place the mayo , honey , salt and vinegar .

Whisk together until combined .

In a large mixing bowl toss together the carrots , raisins and pineapple .

Add dressing to the carrot mixture.

Blend together well , then cover and chill.

Variations :
- Instead of mayo use Greek yogurt for healthier option that is lower in fat and higher in protein
- Add you favorite chopped nut like pecans or walnuts
- Instead of raisins you can use currants or dried cranberries
- To cut down on sugar you can replace the honey with a sugar substitute like Splenda.
- Coconut would also be a great add in

Old Fashioned Carrot Salad
Ingredients
- 1/2 cup Raisins
- 1/2 cup hot water discard after the raisins are plump
- 4 cups Carrots freshly grated
- 20 oz Pineapple chunks drained
Dressing
- 3/4 cup mayo
- 1 Tablespoons Honey
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon salt
Instructions
- Put the raisins in a small bowl and pour hot water over them . Cover with plastic wrap and let them set while you prepare everything else1/2 cup Raisins, 1/2 cup hot water
- Wash and peel carrots . Grate them by hand , with a food processor or any other method you have available .4 cups Carrots
- In a small bowl whisk together the dressing .3/4 cup mayo, 1 Tablespoons Honey, 1 teaspoon apple cider vinegar, 1/2 teaspoon salt
- In a large mixing bowl combine the carrots , drained raisins , and drained pineapple4 cups Carrots, 20 oz Pineapple chunks, 1/2 cup Raisins
- Pour the mixed dressing over the salad
- Mix well and chill for at least 3-4 hours before serving .
- Store in the fridge in a covered container for up to 3 days .
