Protein Peanut Butter Mini Muffins

Ingredients
  

  • 2 Cups Protein Pancake Mix I used Kodiak
  • 1 teaspoon baking powder
  • 1/2 cup sugar
  • 1 Cup Milk
  • 1/2 cup Greek Yogurt
  • 2 large eggs
  • 1 teaspoon Vanilla
  • 1/2 cup peanut butter
  • 1 cup mini chocolate chips optional

Instructions
 

  • Preheat oven to 350
  • Spray mini muffin pan with cooking spray with flour
  • In a large mixing bowl mix together the pancake mix, baking powder, sugar, milk , yogurt, and eggs.
  • Beat until smooth
  • Add peanut butter, vanilla and beat until smooth
  • Fold in mini chocolate chips
  • Fill muffin tin 3/4 of the way full
  • Bake in preheated oven for 8-10 minutes
  • Let cool slightly and remove from pan
  • Can be stored in a sealed container for 2-3 days
