Watermelon Caprese Salad

Watermelon Caprese Salad combines sweet watermelon with tangy balsamic . The mozzarella and salt adds a nice contrast while the basil adds freshness .  This salad is what summer dreams are made of ! Combining all of these flavors is just pure happiness. Obviously if you are not team salt on watermelon just skip the salt . This is a very touchy subject for some people but I just adore salt on my watermelon. The salt really enhances the sweetness of the melon.  Even though fresh basil is easily bought at the supermarket , I grow it in the summer just for caprese salads. Pina Colada Fluff

This Pina Colada Fluff is cool , creamy and the perfect treat for the summer. It has the traditional flavor of coconut and big chunks pineapple that taste similar to the famous frozen drink.  I am not going to lie, my ultimate vacation is laying by a beautiful pool and have frozen pina coladas brought to me all day. Oh we can only dream !! There is just something about the taste of coconut and pineapple that is so classic ..like peas & carrots or Lemon & blueberries.  I also grew up eating all sorts of “salads” with marshmallows in them like Watergate Salad . I think this is totally a southern thing but also very big with my Mother’s generation. Her whole generation made this sweet concoctions with jello or pudding mixes and called them salads. Like calling them that excused the fact that they obviously did not have one veggie in them. These fluffs can be served any way you like. It  can be a side or a dessert, it is totally up to you . Just put a big bowl of this out at your next summer BBQ and watch it disappear. Trust me , you will have no leftovers.

Classic Tuna Salad

This Classic Tuna salad is creamy and full of flavor and textures. The flakey tuna is combined with mayo and eggs with a little relish and celery . This is exactly the way my mother made this when I was growing up so this is pure comfort food for me. On warm summer days my mother would make a tuna salad sandwich on soft white bread served with plain potato chips and sweet tea. The perfect lunch!! When I got older I realized so many people were funny about this salad, like no eggs or relish. What is tuna salad without eggs??  It would be pretty boring and sad.

Caprese Salad with Balsamic Glaze on a serving platter Caprese Salad with Balsamic Glaze is an easy elegant salad. Ripe tomatoes, fresh mozzarella, and basil drizzled with a sweet balsamic glaze and olive oil. I have pretty much killed every plant I have ever bought but the one thing I can grow is fresh hearty herbs. There are two things I love in the summer ..#1 fresh mint in my Iced Tea and #2 Fresh Basil for a caprese salad.  That is my idea of living! If you have never had a Caprese Salad with Balsamic Glaze you don’t know what you are missing . This salad is very simple to make but it is also beautiful and impressive to serve.  This salad can be assembled ahead of time and then drizzled with olive oil and balsamic glaze right before serving.

Old Fashioned Pea Salad

This old fashioned pea salad is just like Grandma used to make. The sweet peas go so good with the savory cheese and bacon. This is a must in the summer for cookouts all the way to the holiday tables in the winter. This is an old fashion staple that has stood the test of time. My grandmother used to serve this and now I do. I am going to be completely honest here, when I was younger I was not a fan of this Pea salad. For as long as I can remember my Mom , Grandmother and Aunt has always had this salad at a family holiday or event . Then BAM in my later teenage years I finally tried it and loved it.  I mean what’s not to love? The weather in southern Louisiana has been on 70’s and beautiful! This time of year on the weekends we are either boiling crawfish or barbecuing. We use any excuse to sit outside and soak in the weather , this past weekend was no exception. This Zesty Pasta Salad supreme is one of my all time favorite salads.  Seriously, I will usually hide the leftovers in the fridge so I can nibble on it for a few days all by myself.  This is one of those salads I never grow tired of and make it several times a year.

Grape Salad

This grape salad is sweet and full of texture, perfect for summer. Chunks of pineapple add pops of flavor and pecans add a nice crunch. One taste of this concoction and believe me you will be hooked and want it all the time. This was something I was wasn’t introduced to until I was an adult and it was love at first bite . To me this grape salad just taste of summer and no summer event is complete without it but it is more like a dessert , or a rich fruit salad. Smoked Gouda Pimento Cheese

Growing up in the south pimento and cheese was a staple in the fridge , and this Smoked Gouda Pimento Cheese is a must. The cold creamy spread on a piece of soft white bread is pure heaven on a hot humid day.  While there are several acceptable brands to buy at the store, when I was young it was usually homemade. If you have never had this wonderful spread it usually consist of shredded cheddar cheese, mayo, cream cheese and of course diced pimentos.  I got the inspiration for this from Sam’s members mark Smoked Gouda Pimentos  Cheese, after purchasing it I literally ate it straight from the container with a spoon. Like always homemade is usually better, and you want have a large container you are forced to eat alone  😉

Cajun Potato Salad

This Cajun Potato Salad is full of spice and isn’t just sprinkled with Cajun Seasoning . I have lived in Southwest Louisiana my entire life and our culture revolves around fabulous food. When any event is planned the meal is planned before the other details are worked out. Even though my family’s heritage is not of French Canadian descent I have been around Cajun cooking my entire life . Most Cajun dishes are cooked with a little of dis and dat and sprinkled with love. These potatoes soak up all the yummy goodness and spices . These is most defiantly sprinkled with love!!
