These Blackberry turnovers are made with puff pastry and canned pie filling, they are super simple to make . Flaky dough holds in the fruity filling and then a little glaze is drizzled on them to add a touch of sweetness. This is the perfect dessert to throw together with a summer feel . Peach Galette

This rustic Peach Galette is packed full of summer goodness . Easier than a pie but just as delicious served with a scoop of vanilla ice cream. Galettes are just free form tarts that are so much easier than a pie . As long as the edges are folded in and pinched to hold in all of the yumminess you are good.  You can go through the trouble of making your own dough but I find the already made pie crust works beautifully for this recipe . Patriotic Star Brownies

I don’t know about your family but mine loves brownies in any shape or size . Dipping just about anything in chocolate is always welcomed at my house. I wanted something a little different for the upcoming 4th of July weekend and got inspiration from Chocolate dipped heart brownies. These brownies can be enjoyed anytime of year but especially those holidays you want to show a little patriotism like 4th of July or Memorial Day.

This super easy chocolate cream pie is a chocolate lovers dream and it comes together in minutes.  This cool and creamy pie is so easy a toddler could make it plus it is the perfect dessert all year. I don’t know about you but we love pie and chocolate at my house so this is a pie I make often. Growing up my Dad wasn’t much on cakes but loved pies , so to say the least we had a ton of pies are my house. As an adult I love all desserts but pies still hold a special place in my heart. Easy Peach Cobbler

This easy peach cobbler recipe is buttery and rich, a cross between a cobbler and pie. It’s amazing served warm with ice cream anything time of the year.  This is my take on a classic cobbler recipe made with Bisquick. Over the years I have made hundreds of peach cobblers and honestly there isn’t one I don’t like. While I adore cobblers made with a pie like crust this is how I grew up eating cobblers. Watergate Salad

Watergate salad is a fluff made with pistachio pudding, whipped topping and packed with pecans , pineapples and marshmallow. Growing up on the 1970’s this was a staple at our house at every summer cook out all the way to our holiday tables. If it was a more formal occasion this went into a nice serving bowl , if it was a less formal occasion it came straight out of the fridge onto the table. Literally no occasion was complete without this green fluff.   It is more like a dessert and that is how I serve it now but back then we mixed in with the side dishes. I guess in the 1970’s we tried to convince ourselves that is was a salad and could be served as a side, lol.  Over the years we have made many different “salads” like my Pina Colada Fluff.

Crumbl Carrot Cake Cookies Copycat Recipe

These copycat Crumbl carrot cake cookies are fluffy and kissed with a bit of spice. Then topped with a creamy cream cheese frosting , just like a cake but in cookie form.  I love these cookies so much more than cake , there is no slicing and plating required . Cookies are the perfect portable dessert ! You have to be living under a rock to not notice that cookie bakeries are all the craze and popping up all over the place.  Crumbl is the big cookie bakery in the south, they are fabulous and always have a line going out the door. These cookies can be a bit pricy in the shops and are so easy to make at home . I have been on a bakery style cookie kick lately . Pina Colada Fluff

This Pina Colada Fluff is cool , creamy and the perfect treat for the summer. It has the traditional flavor of coconut and big chunks pineapple that taste similar to the famous frozen drink.  I am not going to lie, my ultimate vacation is laying by a beautiful pool and have frozen pina coladas brought to me all day. Oh we can only dream !! There is just something about the taste of coconut and pineapple that is so classic ..like peas & carrots or Lemon & blueberries.  I also grew up eating all sorts of “salads” with marshmallows in them like Watergate Salad . I think this is totally a southern thing but also very big with my Mother’s generation. Her whole generation made this sweet concoctions with jello or pudding mixes and called them salads. Like calling them that excused the fact that they obviously did not have one veggie in them. These fluffs can be served any way you like. It  can be a side or a dessert, it is totally up to you . Just put a big bowl of this out at your next summer BBQ and watch it disappear. Trust me , you will have no leftovers.

Homemade Banana Pudding

This homemade banana pudding is a southern staple made with a rich and creamy custard , bananas and crisp Nilla wafers. I grew up eating this on Sundays when I was young and it was a great treat . Back then my mother made a classic Southern Banana Pudding with a beautiful meringue and we usually had it warm or at room temperature.  So this is how I always made it until after Hurricane Delta and we were once again living the generator life. If you have never experienced living off generator power in your home it is basically like camping in your home . Generators generally aren’t powerful enough to run your entire home and only the essentials are powered up like the refrigerator , freezer and a small window unit. We have a gas stove but the oven is electric and we were all in need of comfort food so this is my “generator life” banana pudding. I didn’t have enough power to run a hand mixer to make a meringue or the oven to bake it so no I altered it. Turns out putting the whole egg in the pudding makes it rich and creamy.
