These Brownie Mix Cookies are rich and fudgy and so simple to make . Starting with a brownie mix and a few more ingredients you will have the ultimate cookie in no time. These cookies combine all of my loves Chocolate , brownies and cookies rolled into one giving an ultimate treat.  They bake with a crinkle  top , chewy edges and a fudgy center. Grab a class of milk , you will need it for these cookies.

Watergate Salad

Watergate salad is a fluff made with pistachio pudding, whipped topping and packed with pecans , pineapples and marshmallow. Growing up on the 1970’s this was a staple at our house at every summer cook out all the way to our holiday tables. If it was a more formal occasion this went into a nice serving bowl , if it was a less formal occasion it came straight out of the fridge onto the table. Literally no occasion was complete without this green fluff.   It is more like a dessert and that is how I serve it now but back then we mixed in with the side dishes. I guess in the 1970’s we tried to convince ourselves that is was a salad and could be served as a side, lol.  Over the years we have made many different “salads” like my Pina Colada Fluff.

Crumbl Carrot Cake Cookies Copycat Recipe

These copycat Crumbl carrot cake cookies are fluffy and kissed with a bit of spice. Then topped with a creamy cream cheese frosting , just like a cake but in cookie form.  I love these cookies so much more than cake , there is no slicing and plating required . Cookies are the perfect portable dessert ! You have to be living under a rock to not notice that cookie bakeries are all the craze and popping up all over the place.  Crumbl is the big cookie bakery in the south, they are fabulous and always have a line going out the door. These cookies can be a bit pricy in the shops and are so easy to make at home . I have been on a bakery style cookie kick lately . This is the ultimate cookie for the chocolate and peanut butter lovers in your life.  Bakery style cookies are all of the rage right now with cookie bakery shops popping up everywhere . Those giant cookies they serve can be a bit pricey ranging from $3-$6 each . Cookies are basically butter and sugar right ? How hard can this be? Bakery Style Chocolate Chip Cookies

These Bakery Style Chocolate Chip Cookies are soft and gooey with chocolate in every bite. Have these cookies at home for a fraction of the cost of buying them at the bakery. Boutique cookie bakeries have been popping up all over the place offering all kinds of specialty cookies. It reminds me of the cupcake craze from about fifteen years ago. If you have been to any of these cookie shops you know you will pay anywhere from $3 to $6 per cookie. Seems pricey but they are always so good! I got the inspiration for this cookie from my Fluffy Chocolate Chip Cookie where I added corn starch to the flour to make a soft , tender and fluffy cookie cookie.

Southwestern Tilapia

This Southwestern Tilapia is baked to perfection in a warm blend of spices . It is baked to flaky perfection in minutes . Round this meal out with Spanish rice , black beans and sliced avocado and you have a simple healthy meal. We loved this topped with a spoon full of Texas Caviar, but this is optional. The thing I love about tilapia is it is very mild in flavor and it cooks very quickly.    You can have a whole meal made in 30 minutes or less.

Cajun Corn Soup

Cajun Corn soup is a thick comforting soup full of smoky sausage and sweet corn. It is packed with flavor and is the ultimate comfort food to keep you warm. I will be honest with you , I didn’t grew up eating this type of soup. When It is cold out my go to is Chicken and Sausage gumbo . I worked with a girl for many years that would always talk about her grandmother’s corn soup . She finally brought some to me and I was in love. We lost touch once she left for another job and I never got the recipe, so I have tried to recreate it . One thing she told me was her grandmother would usually use what ever meat she had on hand like pork , beef stew meat or even leftover ham. The main thing about this soup is simmering it to let all of the flavors mingle. Another go to soup when it is cold outside is my Yummy Corn and Shrimp soup.

Texas Caviar

Texas Caviar is a fun dip with black eyed peas as its base and corn to add a touch of sweetness. All of the veggies not only add flavor it adds a certain freshness. The cilantro and spices give this a wonderful Tex-Mex feel  .All this is tossed with a homemade vinaigrette to make a zesty dip to serve with Tortilla chips. The first time I had this yummy concoction was in the 1990’s when my Aunt brought it to one of our engagement parties. In my normal family fashion she made a GIANT bowl of this so we had leftovers. My soon to be husband fell in love with this and it has became a staple at my house for over twenty years . It can be found at our New Year’s Eve parties on to our summer cookouts , it is great for any occasion. It was years later I found out this is also called Cowboy Caviar. No mater what you call it , it is delicious . A great compliment to this dip is my Tex-Mex Layered Dip , both are always party favorites.

Corn Dip

This creamy corn dip has the perfect balance of flavors. The naturally sweet corn is a nice contrast from the spices and the fresh veggies provide a nice texture and flavor. This is the perfect party dip or a great addition to your game day menu. I don’t know about your family but on game dame we need snacks …lots of snacks lol. We love just about anything that can be served with chips like Salsa or a Tex Mex dip . The thing I love about this corn dip is it is so easy , literally ready to eat in less than 10 minutes.

Southern Cornbread Dressing

This classic southern cornbread dressing  is deliciously moist , has the perfect balance of flavor , and packed with fresh veggies.  It is a staple during the holidays and Thanksgiving wouldn’t be the same without it . This recipe is exactly the way my Mother taught me to make it, so it is a family recipe for sure. In my opinion heirloom recipes are the best , pure comfort food. Plus they are tried and true .  Here in the south we don’t do “stuffing” and we don’t put strange things like cranberries or chestnuts in our dressing . I think if I did something strange to our dressing I would be banned from making it. This dish could take center stage for sure , the one thing you do need  with it is Turkey Gravy and Homemade rolls.   Forget the turkey bring me the cornbread dressing !
