Here in southern Louisiana deviled eggs are a staple at any gathering. I will admit I have always been a classic deviled egg kinda girl, just plain and simple.  Recently I have been introduced to adding cream cheese to the yolks….LIFE CHANGING!! It makes the yolks so creamy , smooth and adds a unique flavor.When creating these Jalapeno Cream Cheese Deviled Eggs I had my husband in mind since he loves the jalapeno cream cheese .Also, he follows a pretty strict low carb lifestyle . Roasted Cauliflower with Sweet Mini Peppers is the perfect side for any meal. This is simple and tasty way to make roasted veggies .Have any of you ever just looked in the fridge and think “I have a lot of odds and ends items that need to be used” ?? This is one of those recipes I came up with cleaning out my fridge and thinking just that . I had an extra head a cauliflower that didn’t get used over Easter weekend and some sweet mini peppers on the verge of going bad , the rest is history. Since this is a clean out your fridge kind of dish it is very simple ingredients that most people have on hand, so not a ton of items to buy for one recipe.

Low Carb Meal Prep for the Week

Low Carb Meal prep is so important if you want to stick to you low carb meal plan. Have everything ready for the week to avoid temptations. As most of you know my husband has been following a low carb diet since October successfully. Two major things that I have found that makes his life easy to follow this diet is planning and prepping. If he has all of his meals pre-made for the week and all he has to do is grab and go he is set up for success. This plan has breakfast, 2 main dishes to have some variety and a delicious snack. I find Sunday meal prepping and dividing them in small containers is the easiest so then he is set for the week. My husband has been on a law carb diet since this past October and bless his soul he made through the holidays without falling off the wagon. I try to help him stay on track by preparing meals similar to this Low Carb Meatballs and Creamy Spinach and he can make several meals out of this. For a while we got into a chicken rut , we all love chicken but I felt like I was about to start clucking , lol. When I started making things with ground meat I needed a binding agent and I couldn’t use bread crumbs. Using only eggs wasn’t working out well so one day I added some grated parmesan cheese . It worked GREAT!! It not only helped hold things together but it added flavor and texture.

I know it is after the holidays and most people are slowing down a bit. My reality is a little different , my kids schedule keeps us busy. My oldest son wrestles and his busiest time is January and February. We are seriously out of town every weekend in January and part of February for wrestling tournaments. My youngest son plays basketball , so a few days a week we have that also. I welcome any time savers in my life and I found it with these premade zucchini spirals. I have used them several times in low carb dishes for my husband and we all love them  . They are perfect in this Chicken and Zoodles dish , but if you can’t find them just make your own the traditional way.

Keto Creamy Chicken

This past week was a little wacky for me and I didn’t get as many meals cooked as I normally do.  Last week we had my birthday (HAPPY BIRTHDAY TO ME) and I don’t cook that day , veterans day school programs,  bowling special olympics for my autistic son , and my oldest son’s high school football team played the first round of the high school play-offs. All of these extra activities on top of our normal jammed packed schedule kept me chasing my tail to say the least. Not to mention my two trips to the DMV and one trip to the social security office and I still have an expired driver’s license, the joys of adulting lol. So in a nutshell eating on the run and not cooking is not so easy for my husband that is trying to follow a low carb / keto friendly diet . He fell off the wagon a bit so I am getting organized and meal prepping for him to help get him back on track.

In earlier post I have confessed my love of carbs so this is a little change of gears for me. This Low Carb Bacon Cheeseburger Soup was created to help my husband out in his weight loss journey . Being married for 18 plus years and all the yummy things I cook has caught up with him and he has decided to try and get a little healthier.  He has proclaimed carbs are the devil and that demon has caused havoc on his weight, so we have purged the pantry and fridge of those unhealthy foods. Usually my oldest son would protest to such a thing but we are coming to the end of high school football season and it’s time for him to watch his weight for wrestling season. The joys of a hangry teenage boy is whole other story in itself for another time.
