Cajun Corn Soup

Cajun Corn soup is a thick comforting soup full of smoky sausage and sweet corn. It is packed with flavor and is the ultimate comfort food to keep you warm. I will be honest with you , I didn’t grew up eating this type of soup. When It is cold out my go to is Chicken and Sausage gumbo . I worked with a girl for many years that would always talk about her grandmother’s corn soup . She finally brought some to me and I was in love. We lost touch once she left for another job and I never got the recipe, so I have tried to recreate it . One thing she told me was her grandmother would usually use what ever meat she had on hand like pork , beef stew meat or even leftover ham. The main thing about this soup is simmering it to let all of the flavors mingle. Another go to soup when it is cold outside is my Yummy Corn and Shrimp soup.

It is super easy and better than any soup you will get in a restaurant.  With a little bit of prep work peeling and chopping up vegetables you will have a comforting bowl of soup in no time. This comes together very quickly and your entire family will love you for it .

Prime Rib Soup

This Prime Rib Soup is full of leftover tender chunks of meat floating in a hearty bone broth. It is meat and potatoes in a soup and the perfect way to use those precious leftovers.  A Prime Rib being such an expensive cut of meat is reserved for special occasions at our house . As delicious as this meal is the meat just isn’t the same heated up,  so instead of wasting it I will make another meal out of it. Never , I repeat NEVER throw away those precious bones. Boil those babies up and make the most delicious broth you have ever had. Even if there is no meat left , save those bones.  This Soup is so easy it will soon be a favorite at your house.

Hamburger Vegetable Soup is a quick and easy meal to throw together. This hearty soup is loaded with hamburger meat , vegetables and pasta. This budget friendly meal is perfect to make any day of the week and it also freezes beautifully to have a meal ready to go .  I have been making this soup for many years and it is very versatile . This is a great clean out your pantry soup and throw in any canned vegetables you have stockpiling in there.  I always use pasta in this soup but potatoes could easily be a great replacement .

I had something totally different planned for dinner tonight but when I left work today it was cold and raining. You see, here in southern Louisiana the temperature gets beneath 50 degrees and we lose our minds . Temperatures in the lower 40’s , windy and raining I needed this bowl of spicy yumminess in my life . This soup is something I have been making for years and It is my go to comfort food when it is cold.

In earlier post I have confessed my love of carbs so this is a little change of gears for me. This Low Carb Bacon Cheeseburger Soup was created to help my husband out in his weight loss journey . Being married for 18 plus years and all the yummy things I cook has caught up with him and he has decided to try and get a little healthier.  He has proclaimed carbs are the devil and that demon has caused havoc on his weight, so we have purged the pantry and fridge of those unhealthy foods. Usually my oldest son would protest to such a thing but we are coming to the end of high school football season and it’s time for him to watch his weight for wrestling season. The joys of a hangry teenage boy is whole other story in itself for another time.

So here’s the deal, at my house my 3 teenage sons and husband do not think soup is a meal. They consider  it an appetizer or a side dish, my boys are seriously bottomless pits.  I am always testing the waters with hearty soups to try and satisfy everyone. We all love lasagna  but being a busy mom I don’t always have time to make one. I hit the jackpot with this  filling dish!! All the flavors and cheesy goodness of lasagna without all the fuss. This cheesy lasagna soup is  super easy to throw together and can be made on a weeknight.
