Cajun Sausage Potato Soup

What you will need to make Cajun Sausage Potato Soup
- 5 pounds russet potatoes
- 1 1/2 pounds Smoked Sausage
- 1 yellow onion
- 1 red bell pepper
- 4-5 cloved garlic
- 2 stalks of celery

- 1 can of evaporated milk -Tap HERE for my favorite
- A large soup pot or Dutch oven

Ingredients and Substitutions
Potatoes: I used Russet potatoes for the recipe because I like the starchy texture and the way it will thicken the soup as it cooks . This is purely taste any potato can be used. If you use a red potato or Yukon gold the skin is more tender and you can get away without peeling them .
Sausage : I used a Cajun smoked sausage that is very local to me in Southern Louisiana . If you have an Andouille available to you this is a great choice. If neither of these are available a Kielbasa can be used but you won’t have the spice or smokiness . You may have to add a little more seasoning at the end .
Onion , Bell pepper , celery and garlic: The only substitution I can recommend is any color bell pepper will work . Onion , bell pepper and celery is the base for all of Louisiana cooking , we call it the Trinity and when you add the garlic it’s with the Pope .
Cajun Seasoning : This can be a very controversial subject in Louisiana . I grew up using Tony’s as a season all but it does have a lot of salt . There are so many people now making their own Cajun seasoning, there is a million . Use your favorite .
Butter : I only call for 2 tablespoons of butter you could use an oil of your choice
Evaporated Milk: I grew up in a house that we used Evaporated milk in so many recipes . You could totally use 12 oz of half and half .
Chicken Broth : You can use the convenient already made broth or homemade . I usually make my own with better than bullion or bullion powder .
Green Onion Garnish : Again this is something we put on top of everything for that pop of freshness. You can skip this all together. Shredded cheddar cheese would be a great topping for this soup .
Let’s make Cajun Sausage and Potato Soup
In a large soup melt 2 Tablespoons of Butter . Add smoked sausage and cook until brown .Once browned remove sausage with a slotted spoon and set aside
To the pot add onions , celery ,and red bell pepper . cook for about 5 minutes , stirring occasionally. Add the Cajun seasoning and garlic .Cook for another ten minutes .
Add the sausage and potatoes back to the pot then pour the chicken broth over it all .
Add the evaporated milk and bring to the boil and turn down to a simmer . Cooke for about 20 minutes or until potatoes are tender . Use a potato masher to slightly mash the potatoes . This will slightly thicken the soup.
Garnish with some fresh green onions .

Ingredients
- 2 Tablespoons Butter
- 1 1/2 Pounds Smoked Sausage Sliced in circles
- 1 Medium Yellow Onion (about a cup diced )
- 1 medium Red Bell pepper diced
- 2 stalks celery diced
- 3-4 cloves garlic minced
- 2-4 teaspoons Cajun seasoning see notes
- 5 pounds Russet potatoes peeled and diced
- 8 cups Chicken broth see notes
- 12 oz Evaporated milk
- 1 bunch green onions optional
Instructions
- In a large soup pot or Dutch oven melt 2 Tablespoons of Butter . Add smoked sausage and cook until brown .
- Once browned remove sausage with a slotted spoon and set aside
- To the pot add onions , celery ,and red bell pepper . cook for about 5 minutes , stirring occasionally
- Add garlic ands sprinkle the vegetables with your choice of Cajun seasoning .
- Once the vegetables start to sweat make sure you rub the bottom of the pan to get all of the brown bits from the bottom . Cook for about 10 minutes or until soft
- Add sausage back to the pot
- Then add the potatoes
- Add the chicken broth to the pot
- Add the can of evaporated milk and give everything a good stir
- Bring the liquid up to a boil and then turn to medium heat . Cook for about 20-25 minutes or until the potatoes are tender
- Once the potatoes are done I use the potato masher to smash some of the potatoes . This will slightly thicken the soup . Taste and add salt or more Cajun seasoning if needed
- Garnish with green onions .

It can be depending on a few things . If the sausage you use is is loaded with spices that can make the soup spicy . If you are sensitive to spice you can swap out the Cajun spice for salt and pepper .
Once the soup is to room temperature you can store this in the refrigerator in an air tight container for 3-4 days .
I honestly hate the way potatoes freeze in soups and stews. They always have a strange texture when they are reheated. I say no to the freezing of this soup.
Cheese would be a great addition to this soup . Stirring shredded cheddar into a bowl of this soup would be a yummy addition.
