Hamburger Vegetable Soup
This Hamburger Vegetable Soup is hearty and an easy meal full of flavor. It is loaded with meat, vegetables and pasta.

This budget friendly meal is perfect to make any day of the week and it also freezes beautifully to have a meal ready to go . I have been making this soup for many years and it is very versatile . This is a great clean out your pantry soup and throw in any canned vegetables you have stockpiling in there. I always use pasta in this soup but potatoes could easily be a great replacement .

Things you need to make this soup:
- 1 1/2 pounds ground beef
- medium diced onion and bell pepper
- salt, pepper, Italian Seasoning , and garlic powder
- Better than Bouillon -Beef
- Tomato Paste
- Rotel Tomatoes
- canned Corn, carrots and green beans
- Macaroni Pasta
- Soup Pot
- Spatula or meat masher to cook meat
- Soup ladle
Let’s Make Hamburger Vegetable Soup

In a large soup pot add the ground meat, diced onions, diced bell pepper , salt , pepper, garlic powder and Italian seasoning. On medium heat brown the ground meat and breaking it up. At the same time the onions and bell pepper will be cooking. Once the ground meat is cooked thoroughly add the water stirring in drippings from the bottom of the pan . (Start with 8 cups of water more can be added later). Add the Better than bouillon , can of rotel tomatoes, and tomato paste. Keep on medium to high heat , stirring occasionally until the bouillon and tomato paste is dissolved. Let this cook on low for about 15 minutes . Drain your other cans of vegetables and add them to the pot . At this point add salt and pepper as needed and add extra water if needed. If you add water let the soup come up to a slow boil and add the dry pasta. Let the past cook for about 5 minutes . Turn the fire off , place a lid on top of the pot and let it sit for 30 minutes. The pasta should be done at this point.
Serve this soup with crackers or crusty bread . ENJOY!!

Can this soup be made in a crock pot? I really cannot afford a stock pot/
Hi Betty ..I have never made this in a slow cooker but I am sure you could. I recommend browning your meat and adding the other ingredients except the pasta . I wouldn’t had the pasta until about an hour before serving it. If you make this in the slow cooker share your results, I am just curious.
How much Italian Seasoning is to be added?
Hi Ann it is 1 teaspoon of Italian seasoning
