Hamburger Vegetable Soup is a quick and easy meal to throw together. This hearty soup is loaded with hamburger meat , vegetables and pasta. This budget friendly meal is perfect to make any day of the week and it also freezes beautifully to have a meal ready to go . I have been making this soup for many years and it is very versatile . This is a great clean out your pantry soup and throw in any canned vegetables you have stockpiling in there. I always use pasta in this soup but potatoes could easily be a great replacement .
Before Hurricane Laura I stocked up our pantry not knowing how catastrophic this storm would be. I have lived in Southern Louisiana my whole life and only evacuated for two storms Hurricane Rita and now Hurricane Laura. My husband had been in National Guard for 25 years and had retired less than a month before this storm so his role was a little different than the last 25 years. He did ride out the Hurricane and remained safe but I did stock up the pantry for him before I headed out of town. Little did I know my husbands employer would provide three meals a day for their employees . They even brought in shower trailers , trailers with washing machines and dryers , and provided housing trailers for those that needed it. This was a blessing for many employees since many lost their homes . So now that we have running water and electricity I have a pantry full of canned goods. We had a little cool front and decided to make our family favorite soup. Now what to do with canned tuna and dried beef ?
Let’s Make Hamburger Vegetable Soup!
Things you need to make this soup:
- 1 1/2 pounds ground beef
- medium diced onion and bell pepper
- salt, pepper, Italian Seasoning , and garlic powder
- Better than Bouillon -Beef
- Tomato Paste
- Rotel Tomatoes
- canned Corn, carrots and green beans
- Macaroni Pasta
- Soup Pot
- Spatula or meat masher to cook meat
- Soup ladle
In a large soup pot add the ground meat, diced onions, diced bell pepper , salt , pepper, garlic powder and Italian seasoning. On medium heat brown the ground meat and breaking it up. At the same time the onions and bell pepper will be cooking. Once the ground meat is cooked thoroughly add the water stirring in drippings from the bottom of the pan . (Start with 8 cups of water more can be added later). Add the Better than bouillon , can of rotel tomatoes, and tomato paste. Keep on medium to high heat , stirring occasionally until the bouillon and tomato paste is dissolved. Let this cook on low for about 15 minutes . Drain your other cans of vegetables and add them to the pot . At this point add salt and pepper as needed and add extra water if needed. If you add water let the soup come up to a slow boil and add the dry pasta. Let the past cook for about 5 minutes . Turn the fire off , place a lid on top of the pot and let it sit for 30 minutes. The pasta should be done at this point.
Serve this soup with crackers or crusty bread . ENJOY!!
