Let’s Make some Soup!

- 1-In a soup pot heat up the olive oil and add the onions , bell pepper , jalapeno , and garlic. Sauté the veggies for about 5 minutes or until they are soft
- 2-Add the undrained diced tomatoes and Taco seasoning.
- 3-Let it cook for a few minutes .
- 4-Slowly add the chicken broth .

- 5-Now add the corn and shredded chicken , bring up to boil and then turn it down to a simmer . Let simmer for about 15 minutes .
- 6-After 15 minutes add the cream cheese and sir until it is all meltedÂ
- 7-Once the cream cheese is melted add the black beans and shredded cheese . Stir and let simmer for about 5 minutes
- 8-Serve hot with toppings of your choice .

- 15.25 oz corn drained
- 15.5 oz black beans drained and rinsed
- 2 cups Shredded cooked chicken
- 1 1/2 cups Colby Jack cheese shredded

Instructions

this recipe is everything Debbie says it is. quick and easy to prepare, shredding the chicken and rinsing the black beans was the most work required. it came together beautifully and was very tasty. offers a lot of versatility by swapping out one type of bean for another, subbing pepper jack when you are out of colby jack. it made a lot, probably 3 meals for this 2 person household. i should have reduced the quantities but i will freeze what is left. after i taste it later to see how those flavors have blended since i made it last night.
