These Slow Cooker Chicken Fajita have all the wonderful flavor but the slow cooker does all of the work. Super easy and flavorful the whole family will love these more than the traditional fajitas. This recipe will be on the permanent rotation I am all about making life easy so I love my slow cooker and use it often. These fajitas I have perfected over the years . This is a go to recipe when I have a girls weekend at the beach. Everyone loves fajitas and they go so well with frozen drinks like a Mango Margarita , a beach favorite. These are just as good leftover and make a fabulous Chicken Fajita Omelette.
Items needed to make Slow Cooker Chicken Fajitas
- Slow Cooker
- Slow Cooker Liner-recommended but not required , it makes clean up a cinch
- Lime Squeezer – This makes life so much easier
- Rada chef’s knife- I literally use this everyday
- Cutting Board
- 2 LBs boneless skinless chicken breast
- Onion and Bell pepper
- Fresh Lime Juice
- Fajita Seasoning Packet
- Olive Oil
- Rotel Tomato
This is the most time consuming part of this recipe . Clean and slice the bell peppers and onions and strips and place them in the bottom of the slow cooker.
Now Pour the can of Rotel tomatoes over the veggie mixture.
In a small bowl whisk together the fajita seasoning packet , water, oil and fresh lime juice.
Pour the seasoning Mixture over the chicken breast. Place the lid on the slow cooker and cook on low 4-6 hours or on High 3-4 hours. Cooking times will depend on the thickness of the chicken breast.
Once the chicken is cooked carefully remove it from the slow cooker to a cutting board . Either slice it with a sharp knife or shred it . Then place the meat back into the slow cooker to keep it warm until it is ready to be served.

- Flour tortillas but corn tortillas are good as well
- Refried Beans
- Fresh Cilantro
- Avocado or Guacamole
- Sour Cream
