Holiday Leftovers Casserole

Reinvent your leftovers with this Holiday Leftovers Casserole. This has a tender cornbread base that holds in your meat and veggies. It is then topped with French fried onions to add a satisfying crunch and flavor. This casserole is very versatile and you can use what ever you have leftover.

Let’s Make Holiday Leftovers Casserole

Preheat Oven to 350 degrees and spray a plate plate with cooking spray
  • Mix together the Egg , milk , sour cream and seasoning.

Add the cornbread and mix well , then add a can of creamed corn.

Top with your choice of meat and veggie , then gently press it into the cornbread mixture

Top with French Fried onions

Bake for about 30 minutes

Serve with optional gravy and cranberry sauce

Ingredients
  

  • 1 package Jiffy cornbread mix
  • 1 egg
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1 Teaspoon Cajun seasoning -or salt and pepper to taste
  • 1 can Creamed Corn
  • 1 cup Leftover Veggie -I used Green Beans
  • 1 Cup Leftover Turkey or ham
  • 3/4-1 Cup French Fried Onions
  • Leftover gravy and cranberry sauce optional

Instructions
 

  • Preheat Oven to 350 degrees and spray a plate plate with cooking spray
  • Mix together the Egg , milk , sour cream and seasoning
  • Add cornbread and mix well
  • Mix in the can of creamed corn
  • Pour into the prepared pie plate. Top it with the veggie and turkey , press it down into the mix slightly
  • Top with French fried onions
  • Bake for 30 minutes
  • Serve warm with leftover gravy and cranberry sauce
