Let’s talk about candy corns, even if you hate them you will love this snack mix. With all of the fairs being cancelled across the country we all need our fair foods at home.  This is a collection of 15 Fair Foods with easy to make recipes you can make at home, there is a little something for everyone.  I don’t know about the rest of you but I need my yearly fix at the carnival , not for the rides or games but for the food. I will mentally make a list in my head for weeks ahead of time planning on what I will eat in a short amount of time. I know for a fact I need my funnel cake , candy apple and fair corn dog.  I adore portable food and really enjoy just about anything on a stick . Have fun with your family , choose a few recipes and make them together .  With the help of several fellow bloggers I made a list of wonderful recipes to chose from.

Banana Oat Muffins

These Banana Oat Muffins came to be because I am trying to stay out of the stores and use what we have on hand. What  crazy times we are living in.  I have an autistic son that eats a banana everyday for breakfast and he isn’t happy with me for not having fresh bananas. Sure hope these muffins will replace his morning banana but we will see , he is such a creature of habit. If you have some over ripe bananas and have never baked with them this is the perfect recipe to start with.   I am a huge fan of cooking with ripe bananas check out my Banana Oatmeal Chocolate chip cookies.

I fell in love with Reuben Egg Rolls while on a trip and had to make some . This past February I went on a girls trip to Destin , Florida.  Why a beach trip in February? Because it is BEAUTIFUL anytime of year!! While there we ate at local Irish restaurant and I was introduced to these Reuben Egg Rolls .  They were amazing! Even the picky eaters in my group liked them. I knew when I got home I needed to replicate these babies. My family adored them including my young great nephew . These would be great for any occasion that snacks are required and would be perfect for St. Patrick’s Day. Another great dish for parties and much easier is my Pineapple Jalapeno Meatballs . …

Tex Mex Layered Dip

So ,this Tex Mex Layered Dip has been around as long as I can remember. My mom used to make a large pan of this  and it was very elaborate. She would make her guacamole from scratch of course and make things so much richer . She would had a ton of cream cheese in the bottom two layers and it was so good . She would also put so many toppings on top of the cheese you didn’t know cheese was there until you dug in. Well, this is my version and it is a bit simpler . We love Tex Mex dips at our house , you should check out my Easy Fresh Salsa and  Bacon Bean Dip.

Pumpkin Cinnamon Streusel Muffins

Fall is in full swing and so is my love of pumpkin!! I feel like there is an over saturation of pumpkin everything in the supermarkets, somethings are just not meant to be pumpkin flavored..like TWINKIES. Let’s face it Twinkies are best in their pure form, we all remember when they disappeared off the shelves in 2013 and we never want that to happen again. Pumpkin Muffins are still my all time favorite baked goods, even over pie. Muffins are the most near and dear to me because they are sweet but not overly sweet and perfect for breakfast, snacks, or even deserts. There is nothing like lounging on the sofa all bundled up with a hot cup of coffee and a warm muffin. If you are a pumpkin lover like me you will adore this Pumpkin Spiced Cinnamon Roll Cake.

It’s that time of year again, FOOTBALL Season!!  I live in a house with my husband and three teenage boys , so to say the least it is full of testoserone. It is football football and more football on the weekend. We go to our local High School football game every Friday night there is a home game .We support my hometowns football team and watch the marching band to see the cutest Tuba player there is , my youngest son lol. Honestly since my kids High School has a brand new Stadium it isn’t that much of a hardship.

This Cherry Chia Smoothie is smooth, creamy and full of yummy goodness. Cherries are one of my favorite fruits and the chia seeds adds flavor and nuttiness.  I like to base my fruit smoothies with a Greek yogurt , it is sort of tangy and goes with the sweetness of fruit. I started experimenting with smoothies a few years ago when my teenagers discovered the local smoothie shop. If they had an unlimited budget they would be there everyday but $7-9 a pop they would rather me make them at home and save their money for more important things.

Protein Peanut Butter Mini Muffins are the perfect breakfast on the go. They have hidden protein and the classic Peanut butter and Chocolate combo that everyone loves. It’s officially summer and at my house and that means a busy schedule for my teenage boys. Summer time means camps and training for the activities they do year round. To make things a little crazier my oldest son got a job as a lifeguard at a local water park that keeps him busy on top of his normal schedule . I leave for work at 5:45AM everyday so I don’t have time to cook my kids breakfast .  I was trying to come up with a way to get a little protein in their diet in the mornings. Move over cereal and pop tarts we have protein packed muffins.
