Cookie Butter Rice Krispie Treats
These Cookie Butter Rice Krispie Treats are ooey gooey goodness . They are crunchy with bits of cookies and the rich flavor a cookie butter .
These rice krispie treats got an upgrade with cookie butter . If you have never tried cookie butter this is the perfect recipe to try it . It is rich , buttery and creamy and is a great alternative for those loved ones that have a nut allergy . I will be honest there is a big brand of this but I used the Wal-Mart version and it was fabulous in this recipe . So save a few dollars and get the store brand if you have it available to you . If you love no bake treats that can be made anytime of year you will also love these Peanut Butter Cornflake cookies as well.
What you will need to make Cookie Butter Rice Krispie Treats :
- Cookie Butter – I used the store brand and it worked great in this recipe
- Rice Crisp Cereal -Any brand will work , I used the store brand
- Mini Marshmallows-Any brand will work
- Bicoff cookies
- Unsalted butter
- 9×13 baking pan– If you don’t have one this a staple in my kitchen
- Large pot -a 6 QT dutch oven is another kitchen staple

Let’s Make Cookie Butter Rice Krispie Treats !
Start by melting your butter and cookie butter over medium heat until it is completely melted . Once that mixture is melted add the mini marshmallows . Stir well until everything is melted and combined.
Remove from heat and stir in chopped cookies then add the rice crisp cereal . Stir until everything is coated well .
Press into a a prepared 9×13 baking pan .
Melt two tablespoons of cookie butter in the Microwave and then drizzle over the top .
Once they have set up cut the treats into fifteen squares .
These are the perfect no bake treats ready in minutes for anytime of year , adults and children will love them . My husband says they need a warning label

Cookie Butter Rice Krispie Treats
Equipment
- 1 9×13 Pan
Ingredients
- 8 Tablespoons Unsalted Butter
- 1/2 cup Cookie Butter any brand
- 10 oz Mini Marshmallows
- 3/4 cup Biscoff Cookies roughly chopped
- 6 cups Rice Crisps Cereal any brand
- 1 Tablespoons cookie butter to drizzle over the top
Instructions
- Prepare a 9×13 pan by spraying it with cooking spray . If you want to lift the entire thing out you can do a parchment hammock as I did .
- In a large pot melt together the butter and cookie butter over medium heat
- Add the marshmallows and melt until smooth
- Mix in chopped cookies
- Stir in rice cereal and mix until coated well
- Press into the prepared 9×13 pan
- Melt the cookie butter in the microwave and drizzle over the top .
- Allow to cook and then cut into 15 squares
