When I was in my early twenties I was full of energy and enthusiasm . I thought I wanted to live in the big city of Houston , work at a major hospital helping save lives and stamp out disease. To make a long story short I am a small town girl and that only lasted about a year before I headed back to Louisiana . In that year I lived with my cousin Cathy Lynn and those are memories I will cherish forever. Some of the fondest memories I have of that time is late night pokeno games with my grandmother and Aunt and then it would be Cathy Lynn and I whipping up meals in a tiny kitchen on a shoestring budget. We needed money for our weekend trips and shenanigans , not groceries lol. This was in 1995 so only rich people had computers and Pinterest didn’t exist yet and all we had was our imagination . One of the things we made often was french bread pizzas , it was delicious and affordable. Taco french bread pizza was one of our favorites and this is just a little more grown up version of what we made back then. It is still just as yummy and affordable.
This will give taco tuesday a whole new meaning at your house. French bread split horizontally is a great base for taco french bread pizza, it is warm ,fluffy and filling. Anyone feeding teenage boys know how it is near impossible to fill them up but this will do the trick. What really makes this a little different and special is mixing chorizo with beef, it gives this pizza a punch of flavor. In the place of traditional pizza sauce I used our favorite taco sauce spread on the bread to create a perfect pillow for the taco meat. Cheese spread on top of the meat and baked until a bubbly perfection makes this warm and ooey. Then top with all of you favorite taco toppings , get creative here and use what you love. A little chipotle ranch is drizzled on top is like the cherry on top of a sundae, the perfect touch. This is great for a quick and affordable weeknight meal or even to snack on while watching football. Lord knows the guys in my house can’t watch football without food!
This is a cinch to throw together. In a large skillet start off with ground meat, chorizo , onions and bell pepper.
Once the meat is cooked and the onions are translucent drain the excess grease off and add water
Then the seasonings
Give a good stir and let simmer for a while
Time to build the taco pizza! Split the french bread horizontally .
Cover the bread with your favorite taco sauce
Place the meat mixture on top of the sauce
Top the meat with 1 cup of cheese of each half and bake in the oven until the cheese is melted
While the pizza is in the oven prepare your taco toppings
Once the cheese is melted top the pizza with your favorite taco toppings
Drizzle with the Chipotle Ranch
