Cattle drive Casserole is one of those dishes that can be tailored to your likes and dislikes .It has layers of yumminess starting with a cheesy biscuit bottom , a layer of ground beef , a creamy layer and then topped with cheese . I originally saw this recipe floating around TikTok from many creators . I took it and made it how I liked it but there can be so many variations . What you will need to make Cattle Drive Casserole:
- 1 LB Ground beef – I used 85/15 to reduce some of the grease
- Onion- I used a yellow onion
- Bell pepper -I used a red pepper for the milder flavor
- Red Lobster Cheddar Bay Biscuit Mix -They do make a gluten free version of this
- Taco Seasoning-1 packet or 3 tablespoons
- Mayonnaise
- Sour Cream
- Chopped Green chiles
- Milk
- Shredded Cheese – I shredded my own an used cheddar but you can mix it up
- Mixing bowls
- 9×13 baking dish
- medium skillet
- Meat Masher – I use this tool any time I cook Ground beef

Let’s Make Cattle Drive Casserole !

Star by mixing together the biscuit mix , cheddar cheese , milk and reserve the garlic packet for later . Press the biscuit mix into the bottom of a greased 9×13 baking pan.

In a medium skillet brown the ground meat along with the onions and bell pepper . Drain any excess grease and add the taco seasoning and water. Cook until it reduces and the add it on top of the partially baked biscuit bottom .

In a small mixing bowl add mayo , sour cream , chopped chiles and garlic packet . Mix well . As a side note I have added the garlic packet in this mixture or sprinkled it on top of the cheese at the end.

Spread the mayo mixture over the meat mixture .

Top with cheese and bake in a preheated 350 degree oven for 30 minutes.

Allow to set for 5 minutes before cutting

Biscuit Layer
- 11.36 oz Cheddar Bay Biscuit Mix reserve the garlic herb packet
- 1/2 cup Cheddar cheese shredded
- 3/4 cup Milk
Meat Layer
- 1 Pound Ground Beef
- 1/2 cup Yellow Onion Diced
- 1/3 cup Red Bell Pepper Diced
- 1 Packet Taco Seasoning
- 1/4 cup water
Filling
- 1/2 cup Sour Cream
- 1/2 cup Mayo
- 4 oz green chiles canned -chopped
- `1 cup Cheddar Cheese shredded
- Reserved Garlic packet See Notes
Topping
- 1-2 cups Cheddar Cheese Shredded
Instructions
- Preheat oven to 350 degrees . In a large mixing bowl mix together the cheddar bay biscuit mix , 1/2 cup of cheddar cheese , 3/4 cup milk. Reserve the garlic herb packet for later .11.36 oz Cheddar Bay Biscuit Mix, 1/2 cup Cheddar cheese, 3/4 cup Milk
- Press into on oiled 9×13 pan.
- In a skillet brown ground meat and add the onion and bell pepper while browning it . Drain excess grease and add water and taco seasoning . Simmer until the water has reduced1 Pound Ground Beef, 1/2 cup Yellow Onion, 1/3 cup Red Bell Pepper, 1 Packet Taco Seasoning, 1/4 cup water
- Add the ground meat mixture on top of the biscuit base .
- In a medium bowl mix together the sour cream , mayo , 1 cup of cheddar cheese can of drained green chiles , and the reserved garlic herb packet .1/2 cup Sour Cream, 1/2 cup Mayo, 4 oz green chiles, `1 cup Cheddar Cheese, Reserved Garlic packet
- Spread sour cream mixture on top of the meat .
- Top with cheese and bake for 30 minutes1-2 cups Cheddar Cheese
- Allow to set for 5 minutes before cutting
