Bacon Bean Dip

 

A few weeks ago I was in New Orleans for a two day high school wrestling tournament. I don’t know if any of you have experienced watching your kid get on a wrestling mat for 6 minutes but it is pretty intense. When things end for the evening the boys go back to their hotel rooms and the parents find a place to eat and unwind for the evening. We usually find a Mexican place since we are all in need of a good margarita, but we were in New Orleans . In my minds eye I saw an evening of charbroiled oysters, shrimp po-boys  and hurricanes and it was shot down by needing to find the nearest Mexican restaurant.  Who knew such a thing existed in The Big Easy??

We were in an area of the city none of us were familiar with but thanks to google we found a place.  After maneuvering the crazy one way streets and a few U -Turns we found the place and the parking lot was packed. A good sign, I guess??. It had New Orleans charm with a Mexican flair, but a much younger hip crowd than I expected. I have never seen so many man buns in one place in my entire life, LOL.  While waiting on our table I glanced over the menu, there was vegan alternatives for almost everything . TOFU FAJITAS??? I was thinking we made a terrible mistake. The margaritas come out and the were a bit strong but good , thank god! I decided to order a bacon bean dip to start things off. While the dip was really good I decided I would recreate this at home , because it needed a few tweaks in my opinion. So this is where I got the inspiration for the dip, the tofu fajitas can just stay where they are at , lol.

To start off dice the bacon and cook it until it is very crisp. Drain the bacon on a paper towel and save the skillet with bacon grease

Empty the can of beans into the skillet with the bacon grease and sprinkle all of the seasoning on it

Incorporate all the seasoning and bacon grease and heat really well

In a small baking dish place of of the beans , then half the cheese, and half of the bacon

Top that with the remaining beans, cheese and bacon . Bake in a preheated 350 degree oven for 10-15 or until the cheese is bubbly

Ingredients
  

  • 6 slices of bacon diced and cooked crisp
  • 1 cup Mexican blend shredded cheese
  • 30 oz can Refried Beans
  • 1 teaspoon cumin
  • 1/2 teaspoon McCormick Chipotle Chile Pepper
  • 1/4 teaspoon McCormick Jalapeno Pepper
  • 1/2 teaspoon salt
  • 1/2 black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions
 

  • Dice bacon and fry very crisp , drain on a paper towel and set aside
  • While bacon is cooking mix all of the seasoning together
  • In the same skillet with the bacon grease empty the can of refried beans on medium heat
  • Sprinkle the seasoning on the beans and incorporate the beans with the seasoning and bacon grease
  • When the beans are heated well turn the heat off
  • In a small baking dish place half of the beans , then half the cheese and then half the bacon
  • Place remaining beans on top and then the rest of the cheese and bacon
  • Bake in a preheated 350 degree oven for 10-15 minutes or until the cheese is bubbly
  • Serve warm with Tortilla chips
