These copycat Crumbl carrot cake cookies are fluffy and kissed with a bit of spice. Then topped with a creamy cream cheese frosting , just like a cake but in cookie form.  I love these cookies so much more than cake , there is no slicing and plating required . Cookies are the perfect portable dessert ! You have to be living under a rock to not notice that cookie bakeries are all the craze and popping up all over the place.  Crumbl is the big cookie bakery in the south, they are fabulous and always have a line going out the door. These cookies can be a bit pricy in the shops and are so easy to make at home . I have been on a bakery style cookie kick lately . Pina Colada Fluff

This Pina Colada Fluff is cool , creamy and the perfect treat for the summer. It has the traditional flavor of coconut and big chunks pineapple that taste similar to the famous frozen drink.  I am not going to lie, my ultimate vacation is laying by a beautiful pool and have frozen pina coladas brought to me all day. Oh we can only dream !! There is just something about the taste of coconut and pineapple that is so classic ..like peas & carrots or Lemon & blueberries.  I also grew up eating all sorts of “salads” with marshmallows in them like Watergate Salad . I think this is totally a southern thing but also very big with my Mother’s generation. Her whole generation made this sweet concoctions with jello or pudding mixes and called them salads. Like calling them that excused the fact that they obviously did not have one veggie in them. These fluffs can be served any way you like. It  can be a side or a dessert, it is totally up to you . Just put a big bowl of this out at your next summer BBQ and watch it disappear. Trust me , you will have no leftovers.

Homemade Banana Pudding

This homemade banana pudding is a southern staple made with a rich and creamy custard , bananas and crisp Nilla wafers. I grew up eating this on Sundays when I was young and it was a great treat . Back then my mother made a classic Southern Banana Pudding with a beautiful meringue and we usually had it warm or at room temperature.  So this is how I always made it until after Hurricane Delta and we were once again living the generator life. If you have never experienced living off generator power in your home it is basically like camping in your home . Generators generally aren’t powerful enough to run your entire home and only the essentials are powered up like the refrigerator , freezer and a small window unit. We have a gas stove but the oven is electric and we were all in need of comfort food so this is my “generator life” banana pudding. I didn’t have enough power to run a hand mixer to make a meringue or the oven to bake it so no I altered it. Turns out putting the whole egg in the pudding makes it rich and creamy.

Coconut Poke Cake

This cool and creamy Coconut Poke Cake starts with a simple white cake and then drenched with sweet coconut pudding. Topped off with a coconut flavored whipped  topping and flaked coconut. We love pudding poke cakes at my house and this one right here is no exception. I mean who doesn’t love a good coconut cake?  Growing up starting around Easter and into the summer months we always had some type of coconut dessert . There is just something tropical and yummy about it.  This is one of those simple cakes you pull out of the Ice Box and in warmer months and it is so refreshing. Trust me , it will be the first cake to disappear at a potluck.

Creamy Key Lime Pie

This Creamy Key Lime Pie is baked to perfection in a homemade graham cracker crust and has the perfect balance of sweetness and tang. This is the perfect cool creamy treat that will make you keep going back for more . When I was growing up this type of pie was always in the fridge during the warmer months. My Dad was a pie fanatic and to keep him happy my Mom would a keep simple No bake Lemon or Key Lime pie in the Ice Box. This pie is a little different than those no bake kind, the cream cheese lends a creaminess similar to a cheesecake but not as heavy.

As I sat here this morning checking Google Analytics and looked at my top 10 recipes of 2020 I thought ya’ll might enjoy seeing it also.  Like most of you this past year things have been crazy and the rules we follow as food bloggers were thrown out the windows. I was no longer writing recipes to make the Google gods happy , I was trying to be helpful . More people were forced to stay home and cook so I was creating recipes that were easy and things most have on hand.  Some of these recipes top 10 recipes are old favorites and others are new .

Pecan Tassies

Pecan Tassies are a cute name for a bite sized pecan pie . These tarts have a flaky crust and gooey filling with a crunchy pecan top. These little gems are a southern tradition and usually served right along with the cookies.  Even though they look and taste like their larger counter part they do have some differences. The first thing is the crust is more dense and crumbles like a cookie , but almost has a richness to it. The filling is gooey but is made with brown sugar instead of a corn syrup.

This creamy easy fudge is made in minutes with minimal ingredients . Rich and chocolatey this is the perfect fudge for the holidays, nobody has to know you didn’t work hard .  Have you ever made fudge with your Grandmother or Mom and it was a difficult and lengthy process and a candy thermometer was involved ? As much as I love fudge , I hate making it the old fashioned way. I am here to to tell you this process is the way to go and everyone will think you stood at the stove for hours making their holiday favorite. Southern Sweet Potato Pie

This southern sweet potato pie has just the right amount of sugar and spice, then is  baked to perfection . This pie is a staple in the South during the holidays and even takes the place of pumpkin pie on some dessert tables. Growing up my mother did not make pumpkin pie during the holidays. This was our pie of choice along with Pecan Tassies. This decadent pie is over looked many times during the holiday , but a really don’t know why . The funny thing is if you love pumpkin pies you will adore this rich and creamy pie. The opposite isn’t always true ..weird but true. I haven’t figured out if it’s a flavor or texture thing. This pie is like mashed sweet potatoes but held together slightly with a little spice, a little different from it’s holiday pie cousin.
