In Louisiana we have very distinct seasons and they usually revolve around foo. We have crawfish season , Gumbo weather , and of course King Cake Season. Traditionally most bakeries won’t start selling King Cakes until after The Epiphany(12th Night ) , but now days they will start making them the week after Christmas . If you don’t live where King Cakes are easily accessible, No problem these King Cake Bites are the next best thing . The ingredients needed to make king cake bites -Crescent roll dough, powdered sugar , vanilla , cream cheese , cinnamon , lemon , milk and sanding sugar

What you will need to make King Cake Bites :

  • Crescent Rolls- The sheets work great for this but if they are not available you will need to crimp the seams
  • Cream Cheese- Room temperature works best for this recipe
  • Powdered Sugar
  • Cinnamon- I love Saigon Cinnamon for this recipe
  • Lemon juice – Fresh or bottled lemon juice will work for this recipe
  • Pure Vanilla extract
  • Sanding sugar -Purple , green and gold click here to see on amazon
  • Parchment paper
  • baking sheet
  • kitchen knife or Pizza Cutter

Let’s make King Cake Bites !

Steps 1-4 on how to make king cake bites
  • 1-Start by creaming together the cream cheese , powdered sugar , lemon juice and vanilla with a hand mixer . Mix until smooth and creamy and set aside .
  • 2-Take one can of crescent dough and divide it in 4 rectangles. You will have a total of 8 rectangles with both cans of dough. If the sheets are not available to your then make sure you press the perforations together
  • 3-Sprinkle about 1/4 teaspoon of cinnamon per rectangle and gently spread it around with the back of a spoon.
  • 4-Spread a small amount of the cream cheese mixture down the center of each rectangle
Steps 5-8 on how to make king cake bites
  • 5-Take the edge closet to you lengthwise and bring the edge to the center
  • 6– Then take the edge lengthwise furthest away from you and bring it to the center and pinch the seam together
  • 7-Cut each rectangle into 4 pieces
  • 8-Pinch the ends together to prevent the filling from leaking out during the baking process
Steps 9-12 on how to make king cake bites
  • 9 -Bake in a 350 degree oven for 13-15 minutes or until golden brown
  • 10 -Once the bites have baked and are completely cool mix together the frosting
  • 11-Dip each bite into the glaze and drip excess off
  • 12– Immediately sprinkle the colored sanding sugar on each bite after dipping

The frosting usually dries pretty quickly , once dried store them in an airtight container .

Ingredients
  

  • 2 8 oz Crescent Rolls The original or the sheet
  • 1 8 oz cream cheese room temp
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice
  • 2 teaspoons cinnamon

Icing

  • 1 1/2 cup powdered sugar
  • 3-4 Teaspoons milk
  • 1/4 teaspoon vanilla
  • Sanding sugar Purple , green and Gold

Instructions
 

  • Preheat oven to 350 degrees
  • Mix the 8oz Cream cheese with a 1/2 cup of powdered sugar , lemon juice and vanilla . Mix until smooth and creamy . Set aside

  • Unroll crescent rolls . Divide the dough into 4 rectangles. If you are not using the sheets press the perforations together . You will have 8 total with both cans

  • Sprinkle each rectangle with about 1/4 a teaspoon of cinnamon and spread it around with the back of a spoon
    2 teaspoons cinnamon
  • Spread cream cheese filling evening down the center of each
  • Folding lengthwise take the edge closet you and bring it to the center
  • Then the edge furthest from you and bring it to the center . Pinch the seam together
  • Cut each rectangle into 4 pieces
  • Pinch the cut ends to prevent the filling from escaping during the baking process. and place on a parchment lined baking sheet
  • Bake 13-15 minutes or until golden brown
  • Remove and allow to cool compeltely on a cooling rack
  • While in a small bowl combine 1 1/2 cups of powdered sugar , 1/4 teaspoon of vanilla and 3 Tablespoons of milk. Stir and add milk until the consistency is thick but thin enough to drizzle .
    1 teaspoon vanilla, 1 1/2 cup powdered sugar, 1/4 teaspoon vanilla, 3-4 Teaspoons milk
  • Once the bites are cool dip each one in the glaze
  • Immediately sprinkle the purple green and gold sand sugar on top .

If you don’t like cream cheese filling that’s ok. I recommend spreading a little butter on each rectangle and then topping it with a cinnamon sugar mixture .

Do I have to use the cream cheese filling?

If you don’t like cream cheese filling that’s ok. I recommend spreading a little butter on each rectangle and then topping it with a cinnamon sugar mixture . 

Can I add anything else to the filling ?

The fillings are endless . You can add a pie filling like apple pie or lemon pie filling . You can even add a jam along with the cream cheese . Just be careful not to over fill it .

What can I add instead of the sanding sugar ?

You can make extra frosting and you food coloring to make it purple , green and gold. Then drizzle it on the king cake bites

Can I cut this recipe in half ?

Yes just make half of the amount of filling and icing , then one can of crescent dough
