Forget sweet potato casserole this sweet potato cobber is so much better . I will be honest with you , I was a teenager in the 1980’s before I ever saw a sweet potato casserole with marshmallows on it. I am not knocking it but my family either made Candied Sweet Potatoes or Sweet Potato Cobbler for the holidays. Once you try this you won’t ever go back to a plain sweet potato casserole .

- Brown Sugar
- Granulated sugar
- Self Rising Flour
- Milk
- Cinnamon

Let’s make Easy Sweet Potato Cobbler !

Peel and cube sweet potatoes. Boil for 10 minutes , you should be able to pierce them with a fork . Before draining them reserve 1 cup of the water .

Preheat oven to 350 degrees and melt the butter in your skillet or dish .

Place drained sweet potatoes on top of the melted butter. Then layer the brown sugar and cinnamon on top of the potatoes .

In a mixing bowl whist together the self rising flour , granulated sugar , milk and vanilla . Mix until smooth.

Pour the cobbler topping into the skillet but do not mix together .

Now pour the reserved hot water over the contents of the skillet but Do not mix together .

Mix together the cinnamon and sugar in a small bowl then sprinkle it over the cobbler , but again do not mix .

Bake for about 40 minutes or until golden brown on top.

Serve warm as a side .

Serve with a scoop of ice cream or whipped topping as a dessert .

Easy Sweet Potato Cobbler
Ingredients
- 4 cups sweet potatoes peeled and cubed
- 6 Tablespoons butter No substitutes
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
Cobbler topping
- 3/4 cup Self Rising flour
- 3/4 cup granulated sugar
- 3/4 cup milk
- 1 teaspoon vanilla
- 1 cup boiling water Reserved from Boiling the sweet potatoes
Cinnamon topping
- 2 Tablespoons granulated sugar
- 1/4 teaspoon cinnamon
Optional
- Vanilla ice cream or Whipped Topping
Instructions
- Peel and cube sweet potatoes. Boil for 10 minutes , you should be able to pierce them with a fork .

- Reserve 1 cup of the water and drain the sweet potatoes

- Preheat oven to 350 degrees Melt butter in a 10inch skillet or 3 QT baking dish

- Place drained sweet potatoes on top of the melted butter . Carefully spoon them over the butter in the skillet

- Sprinkle the top of the sweet potatoes with the brown sugar and cinnamon

- Mix the Self rising flour , milk , sugar and vanilla until smooth

- Pour over the sweet potatoes evenly – DO NOT MIX

- Pour the reserved hot water over evenly of the casserole -DO NOT MIX

- Mix together 2 tablespoons of sugar and 1/4 teaspoon of sugar in a small bowl . Sprinkle it over the cobber – Again DO NOT MIX

- Bake in the preheated oven for 40 minute or until bubbling and golden brown – If your dish is full I recommend putting an old baking sheet on the rack beneath this in case it bubbles over .

- Serve warm as a side

- As a desert serve with ice cream or whipped topping

- Store in a covered container in the refrigerator up to 4 days .

In the south we tend to serve our sweet potatoes on the sweet side even as a side dish. This can be served as a side dish or dessert , it is great either way. If serving as a desert add a scoop of ice cream or whipped topping
Absolutely ! Chopped pecans or walnuts adding to the top of this would be fantastic.
My family only used cinnamon in this but if you like nutmeg or all spice that would be a great addition .
